Anyone know how to make lovely roast potatoes?

Certain types of potatoes are better for roasting. Probably somebody will know which is best - or your greengrocer should be able to tell you. Also, goose fat is supposed to be best for roasting. :xmassign:0

I recently returned to beef dripping after using oil for years, and I'll never go back - the taties were superb and so full of flavour!

Part boil them, drain, pot back in saucepan with lots of flour and bash them about a bit. Then cook in oil or whatever, re-coating them every so often. Gorgeous!!0 -
Afternoon
I dont like roasties with Olive Oil. Always part boil the spuds and then use the fat from the meat to crisp/roast them. Chicken/Duck/Lamb and goose fat are my favs. If not cooking meat or not enough fat, I top up abit with vegetable oil.
I have a few times if short on time, part boiled like usual then drop into hot oil in the chip fryer-they taste fine, but not as nice as oven roasted
