Finally made the parsnip soup I mentioned a few days ago :o Didn't have any coconut but went without and it tastes lovely. I will freeze it for lunches for me later in the month. Used up last of the parsnips, couple of softish onions and old potatoes too.

Kids and I have just had leftover pasta bake and finished some leftover quiche for lunch. Still have two mini quiches which I will freeze as I don't think I can eat another two in the next day!

We still have quite a big to use up before we go away on Monday, so I need to plan this carefully so as not to waste anything.

    I would like to join

I have loads of boozy cream, mince pies, some saggy bananas and a Christmas pud - any ideas what to do with them.

I put my boozy cream on my morning porridge

I made a lovely veg soup from veggy leftovers.

I had to throw away some tomatoes that were going mouldy and some slimy lettuce. I guess that isn't bad going.
    An average day in my life:hello: :eek::mad: :coffee::coffee::coffee::T :o :rotfl: :rotfl: :p :eek::mad: :beer:

  • Just used the last of the veg I bought just before Xmas! Mushrooms looked slightly funny but everything else looked fine. I made a savoury mince and it had onion, carrot, mushroom, sweetcorn, green beans and peppers in it :-) Kids loved it so think it will become a staple meal in our weekly planner to make sure all veg is used up.

Oooh great tip! Hope it works as my celery also goes floppy, I detest it raw/in salads and only use a small amount in soups/stews/stocks so it takes me forever to use up a whole celery if I happen to buy it.

I'm the opposite. Celery never stays long enough in my house for it to go floppy. I adore crunching on sticks of celery. Get through at least three sticks per day, not including what goes into salads.

I'm not so keen on it cooked though

Just used up a savoy cabbage and some new potatoes to make tea - fridge looking very bare these days!
  • I've used up clementines before by making the juice into jelly (just add gelatine/veggie-gel).

I've also made Nigella's clementine cake which was lovely and moist but OH didn't like it so I ended up chucking some of it out last time! http://www.nigella.com/recipes/view/clementine-cake-2559

Finally Nigella also has a great , easy cake recipe which uses up a pot of jam per cake (any flavour works!) http://dinnerdujour.org/2012/09/20/nigella-lawsons-store-cupboard-chocolate-raspberry-cake/
  • not done so well today oh cooked the dinner and did to much rice. we cut the chilli chicken portions and put some in freezer for another time. no waste on plates except a small amount from dd again . we obviously need to cut her portion size a bit more.
You can if you think you can .
  • First item of the year thrown out a few sad salad leaves, probably about 10p worth. I made mac n cheese yesterday with some of the cheese from Xmas and some sorry looking tomatoes, OH loved it.
Got spag bol in slow cooker with mince that needed using of freezing today with lots of sad looking veg hidden in it :D
Portion of steak and ale stew went in the freezer yesterday, as I had planned to make a pie with leftovers from the evening before dinner but OH ate most of it :(.

Feeling very proud of myself with only 10p wasted.

Dinner tonight was Slimming World Cheesy bacon & potato hash (cabbage, leek & bacon chopped up in an oven proof dish, topped with sliced potatoes, with 200ml chicken or veg stock, parsley & garlic all mixed together poured over the top and put in the oven for an hour, sprinkling cheese on top for the last 15-20 mins)

I used 1/3 of a cabbage, had used 1/3 to make this the other day (to use up christmas gammon), 3 leeks (could have just used 2 but the 3rd looked a bit sad so chucked it in too). Chopped up the last 1/3 of the cabbage and put in the freezer for the next time we have this.

On Fridays I normally do quick & easy for the kids (fish fingers/pizza etc) as a treat but had nothing like it in the freezer so got some chicken mini fillets out this morning and then used up the ends of 2 homemade loaves and a shop bought loaf and made breadcrumbs to turn the chicken into 'big nuggets' :) Made loads of breadcrumbs so the rest of them have gone in the freezer.

DH had some beef stew leftovers for lunch at work today with the last 2 slices of homemade granary bread, and I had the last of the stew leftovers for my lunch.

Fridge is looking very empty and sad now! Really hoping that DH gets paid tomorrow as although we can live out of the freezer for probably another week we do really need some fruit and veg (just half a cucumber, 3 cherry tomatoes and a red pepper left) and yogurts etc. Was going to make some yogurt today but didn't have any to use as a starter and couldn't find the Easi-yo sachet I thought was lurking in the cupboard.

Brilliant thank you! Going to try the Nigella Clementine cake I think :)
