I'm really at a loss for what to do with the leftovers from todays roast. We've got a huge mountain of roast pork which could last for about a year (if I take the time to store it properly!) but the leftover spuds and veg only represent enough for bubble & squeak for one person. Plus I've got some yorkshire pud batter left over but again, not enough for anything useful for 2 - toad in the hole or anyhing like that. Veg-wise, I had less in than I thought so we're down to mushrooms, onions, 2 leeks and some frozen peas. I could do different meals for each of us (there's only 2) but OH generally prefers that we eat the same for some reason. Can anyone come up with some imaginative ideas for how to stretch leftover veg for one and yorkie-pud batter for one into something interesting and edible using as much LO pork as you fancy plus the extra veg listed above?
I'm going to have to visit the SM for more veg before tuesday's dinner but it's pretty certain that our menu will be heavy on the pork this week!0 -

Do you have any spices or sauces? What about a chinese type meal wih the pork and use the batter for a pancake and fill with your chinese pork, mushrooms,leeks etc
Or Pork Strogonoff, you could use all your veg and serve with rice or jacket potato. Pancakes! Why didn't I think of that?! I have all sorts of spices in the cupboard so there's probably something in there suitable to make a nice savoury pancake. I think this is going to be one of those meals that goes against all my MSE instincts and upbringing... if it needs padding out, i'll be adding more meat rather than veg or carbs!0 -

Sometimes you can't see what's right in front of you, can you :rotfl:?
You could also make a really thin omelette if your partner is eating same filling, but you don't have a enough spare mix to do another pancake ( unless you're using it for a pud!?.

So when I got home, the batter looked decidedly iffy - all separated and brown. Decided to ditch that and just use up the meat and veggies - made it into a yummy stew type thing with lots of dumplings. Mostly because there weren't that many left over potatoes. Mostly because they ended up in my tummy while I tried to figure out what to do with the rest of it :rotfl:
Tonight we're on a snack-type meal as we're going to a meeting which usually serves up some sort of supper later. Or we'll end up with another snack-type meal when we get in if we don't like the supper!
So, plan for the rest of the week now looks like...
Wed: LO pork in mushroom sauce with mash & leeks
Thur: HM pizza
Fri: Faggots, mash, peas, gravy
Sat: I'm out so he'll have to have freezer surprise - possibly thai green curry but there might be something else he'd like. Or maybe he can think about what to eat for himself for once
