I am making ratatouille, as MIL gave me lots of courgettes. Will probably serve it with rice and salad.

I hate to say it but the blueberry cake was poo smiley-confused002.gif BUT I think this is more to do with my lack of proper ingredients than the recipe. Taste is ok but deff not light and fluffy like it is supposed to be (in fact the blueberries went to mush and it fell apart ). Next time (I will do it again) I will use the proper ingredients and not put the blueberries in the bottom of the tin but instead just mix them into cake mix! Anyways heres the recipe for those who still want it :rotfl:

100g softened butter, plus more for greasing
    100g golden castor sugar
    2 med eggs, beaten
    50g sifted self raising flour
    50g ground almonds
    half tsp baking powder
    4 tbsp semi skimmed milk
finely grated zest of one lime
    100g blueberries

grease 1lb loaf tin and line with parchment paper.
Place trivet or upturned saucer in SC and put enough cold water to cover.
Cream the butter and sugar together until light and fluffy then slowly add eggs beating well after each addition.
Fold in flour, almonds and baking powder then add milk and lime zest.
Place enough blueberries in tin to just cover base
Fold the rest of the b/berries into mixture then spoon mix into tin
Put tin into SC and put lid on.
Cook on high for about 3-3.5 hours

If you want to use the oven bake it for approx 50 mins on 170C (325F)

I've nicked FH's sausage idea and using up practically everything edible in the house :)

I've browned the sausages first ;) and added 2 x tinned toms, 1 tin chick peas, 1 aubergine, 3 courgettes, tom puree, herbs de provence, carrotts, onion and some new potatoes (because I'm really lazy :rotfl:)

Hopefully it will turn out okay.

I am going to do some sort of stuffed squash, as I have been given two sweet round courgette-like squashes. Fancy an Indian flavoured kinda thing, may have to adapt some recipes.
