    Spag Bol for me too tonight - it's the first time I've used my slow cooker too!

    Sausages, leeks, bacon, apples and cider. Cooking overnight then will be cooled and frozen ready for another day :D

  • Today I have chicken, can of tomatoes, tin of pineapple pieces, peppers, onion, tblsp brown sugar, 2 tblsp rice wine vinegar and a splash of soy sauce. A tasty sweet & sour for us tonight.
    Need to start again :o

  • going to put some chicken thighs, a tin of condensed chicken soup, some herbs, garlic powder and frozen peppers in mine to have with plain boiled rice later....

    Its a bit of a cross between a cake and a loaf. Its quite yummy although mine was a first attempt and turned out a little heavy. Just about to do some cleaning (flyladies HHC) but will post the recipe later for you :D

    Ok HHC done - right coconut bread. Heres the recipe

    75g unsalted butter, melted and cooled plus extra for greasing
    2 eggs
    300ml milk
    375g plain flour
    2 tsp baking powder
    250g golden caster sugar
    150g dessicated coconut
    Butter a 1kg loaf tin (2.25lb) and line base with parchment paper
    Place trivet into base of SC (I didnt cos my loaf tin doesnt quite fit and hovers nicely).
    Lightly whisk eggs and milk and set aside.
    Sift flour and baking powder into bowl.
    Add sugar and coconut and mix well.
    Gradually stir in egg mixture until just combined, dont worry about lumps its better not to overmix and this will make it a tough loaf.
    Fold in melted butter until just combined.
    Pour mixture into loaf tin and cover with buttered foil making a pleat in centre to allow loaf to rise.
    Place tin on trivet and pour in enough cold water to cover base of trivet.
    Cover with lid and cook on low overnight or for up to 9 hours.
    Recipe suggests toasting but I just eat it as it is!
