today I have got 3lb of mince (plus onion, pepper, celery, carrot & toms) simmering away which will be spag bol for dinner tonight & I'll freeze the rest down in portions for the 4 of us ready to be used for whatever we fancy ie spag bol, chilli, lasagne etc

Yep its a soup I have made for ages but only just tried it in SC today. You need 2 onions chopped up, 4 carrots sliced, 4 bits of celery sliced, 4 bay leaves, 20 whole peppercorns, 900ml approx of stock (supposed to be ham but I sometimes find it a little salty so you can use ham or veg or a mix of both) and approx 8 oz of red lentils (no need to soak ones are best). Chuck it all in and cook on high until it all goes thick and cooked then slice a smoked sausage and chuck it in and carry on cooking for about 45mins. All times are approx cos I wasnt really paying attention to when things went in. Can be frozen aswell so I make a batch and portion it up and freeze for another night!!Emma :dance:

made the most stunning tea! 4 onions, some mushrooms nearly past thier best, a bit of chicken leftover from sunday and a tin of pineapples! to this i added a tin of pineapples as there was hardly any chicken, popped it on at 8am and hey presto all done when i came home at 4.
Soaked some cous cos and quick easy tea all ready!!!:A :j0 -

Steak and Mushroom Pudding
In a pan melt 40 grams butter and tbs of Olive oil.
Then add 2 large onions and sweat off until soft. Add 40 grams of brown sugar and stir in to the onions, leave to cook for 2 mins.
Add in 100grams of sliced mushrooms and leave for 2 mins. Then add 1tbs of plain flour and mix thoroughly.
For the pastry use Puff pastry ready to roll if you like. Line a 1.5 litre pudding base, saving some pastry for the lid (I only used a lid to save on calories.)
Make 150ml beef stock, add tsp of mustard and worstershire sauce to the stock mixture.
Layer the pudding bowl up with the onion and mushroom mix and the sliced beef. I used casserole beef steaks sliced 700g is more than enough.
Add the pastry lid, if using pastry in the bowl too then brush the top of the bowl pastry with egg and add the lid.
Make a tinfoil pleated top and pull out at the top so the pastry has space to rise. Wrap string round the pudding dish to secure the tinfoil, and also create a handle if required.
Put the pudding dish on an upturned saucer, and fill slow cooker with boiling water to half way up the pudding dish.
Recipie says takes 6 hours on high, I had mine on for 11 hours on low and it was cooked. Brown pastry top in oven to crisp up if necessary.0 -

in my SC at the moment is a tomato & lentil soup that I am experimenting with
I bunged it in last night before bed & am about to go & taste to see how it turned out
I have decided making soup overnight will be perfect for winter so I can have it ready to give to children for packed lunches & hubs to take to work so if anyone has any SC soup recipes I'd be grateful
Will update when I've tested my soup
