Sounds lovely....do you have a receipe to share?

    Thanks.

Hi Loud57 - it goes roughly like this: fry sliced onions and a little minced garlic in olive oil until they are golden. Add a tsp of mixed spice and a generous handful of dried apricots (roughly chopped), a pint of vegetable stock (chicken stock should be nice too if you're not veggie) and put the mixture in the slow cooker. Cook on low till all is nice and soft (the recipe says 4 - 6 hours). Then sprinkle in 8 oz of couscous, and keep cooking on low till the couscous is soft. This takes 10 mins max. While waiting for the couscous to soften, cut a block of feta cheese into small cubes - quantity depends on how much you like feta. I used a 200g block and that was plenty. Once the couscous is soft, mix it with the feta cubes and a handful of chopped parsley and leave it a few minutes to warm through. Just before serving, sprinkle with toasted pine nuts and drizzle with a little olive oil.
    Enjoy!
p.s. you should use old fashioned dried apricots for this, not the ready-to-eat ones.

:j SC has just arrived - slightly over-estimated the size though :o

It would feed a family of 10, theres only 3 of us.

Anyway, gonna try a beef stew one day this week. Could I just throw new potatoes in at the beginning of cooking it or later on? And would it have to be new pots or ordinary white ones? Sorry again for silly questions. Thanks. x
Just to win anything would be great!!

I like the larger sizes, because you can make enough for 2/3 days, which I often do. You can always freeze down any extras if you don't want them. New potatoes are good as they keep their shape well, but you can use other types.
There are usually a few recipes/hints & tips included with the slow cooker manual, so that should get you started.

Casserole beef in mine which I browned quickly while I was cutting veg. I've added carrots, onion and peas to it and the lot is happily cooking in some red wine gracy I got reduced to 12p in Morrisons the other night.

    It smells yummy!

*edit* It was very very tasty, I have another pot of gravy in the freezer and some whoopsie'd beef and will definitely make that again!

Yesterday I made a sort of sausage casserole in my smaller SC.
Pack of sausages fried off, some onions and garlic fried off, leftover veggies(carrot and cauliflower), shake of chilli flakes, chopped potato and a packet of sausage casserole mix made up with water.
    Kids loved it!!

I'm going to try the apricot couscous as described in post 2184 later this week.

Off to buy another slow cooker today, a smaller one to work alongside the huge one I already have. I will be able to cook dinner and pudding at the same time!!
