    My 'chicken' (turkey) casserole went down a real treat. I think that the celery really helped with the flavours. We eventually had it with mashed potatoes and steamed sprouts - and I heard OH scrambling about (as quiet as he could be removing a glass lid!) digging around for second helpings. Had to get in there quick to put some to one side for future meals. Nearly cool enough to go in the freezer now - better remember to label them first though - or else they'll get confused with all the other unnamed containers in there!

    ... well, the meat sauce for the pasta bake. Smells lovely - pork, red pepper and tomatoes! Can't wait.

    Commonly known around Old Style as - it's Freezer Surprise for tea! :)

    I've been Money Tipped!
    Vegetable soup using up the leftover vegetables! simmering nicely in Mums old tower slowcooker and will blitz in the processor tonight and pop into fridge, then add butter tomorrow and milk and hopefully have a yummy hm soup for tomorrows lunch.
    Our days are happier when we give people a bit of our heart rather than a piece of our mind.

    I have apiece of lamb defrosting in mine.. nice lump of shoulder..

    So ideas welcome.. normally I cook it as is..

    (1) it happens to other people as well as me

  • I made pheasant in mine today and it was lovely. Just roasted it in a pan to brown with carrots, celery, onion, garlic, mushrooms. Put in sc, cooked for around 4 hours on high...delicious!

    Well I finally got around to doing a whole chicken in my SC last night. Have to say that I was disappointed with the result.

    It went in around 10 last night (on auto) and taken out around 8 this morning. Of course it fell apart when I lifted it out - as I expected it to do. What I wasn't prepared for was what looked like bloody bits around the bones of the legs and thighs and around where the breast meat attached to the carcasse.

    I had to put the thighs, drumsticks and wings back in the SC this morning along with the bits cut off the underneath of the breast pieces - so they could all finish cooking (waste not want not!). The idea was to make chicken and leek soup from the stock. Around 7 this evening I sifted through all the meat/bones/skin to sort what was edible enough for the soup and was giving the remainder to the cat (took ages to go through) - but the ungrateful little s%d wouldn't eat it :mad: .

    The breast pieces made a great roast dinner with mash, the last of the goose fat roasties from christmas, leeks, honey roast parsnips and gravy made from some of the stock from the slow cooker (put the chicken back into the gravy to really heat thoroughly).

    I then did some finely sliced leeks in the microwave and added to the SC. After a while I removed the meat and leeks and 'whizzied' them with the handblender. The soup looks and taste fabulous now and is cooling down to go in the freezer later (or tomorrow if not cool enough tonight).

    BUT next time, I'll roast the chicken and then put the carcass and scraps in the SC for stock afterwards.

    ... with my slow cooker!

    We sometimes get take away or ready meal from M&S at the weekend, and I love their beef casserole. Now, after a few attempts I have mastered the M&S casserole and mine tastes pretty much like theirs - only better of course!!! :D

    Yesterday I had a day that anyone with children will understand (maximum whinging and tiredness, both starting at once of course!), and it was so nice to have dinner all ready to take out of the slow cooker once I had put them to bed.

    Anyway, my point is, just because it is coming into summer, don't put your slow cooker away in the cupboard for next winter. I love using mine in the hot weather because as well as getting dinner out of the way in the morning (or the night before), I don't have to have the oven on when everyone is hot and sticky enough already.

    Am happy to share my beef casserole recipe with anyone who wants it :)

    P.S My girls are not that bad normally - just one of those days, you know?
