    2 tbsp tomato puree
    2 tbsp brown sugar (light or dark)
    2 tbsp balsamic/brown vinegar

    Mix together, and marinade chicken in it for 45 mins - 1 hour. Add salt and pepper before popping in oven for 35 mins.

    Makes enough to marinade four bits of thigh/drumstick.
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

    I also love corned beef hash and cheesy potato pie and have taken to making a corned beef pie using one can of corned beef, mixed with one can of baked beans, some chopped red onion and Worcestershire sauce, topped with mashed potato and grated Cheddar.... It's so yummy when all cooked through. Perfect comfort food.

    A friend has also discovered that those tinned mackerel in tomato sauce are great as a topping on a margarita pizza, or as a mini pie with mashed potato on top.

    I am having for tea

    corned beef layers!!

    1 layer of thin slice tomatoes, i layer thin corned beef, 1 layer mashed potato
    repeat and top with cheese and a slice of tomato - I serve with baked beans or in tonights case tinned spaghetti as the kids begged for spaghetti!!

    tinned hotdogs/ bockwurst type things are yes. you have the choice of warming them to eat, or serving cold.

    we bought a jar of bockwurst in lidl especially to try that very idea :D

    After posing a question about what else you can put with sardines in a sandwich,i realised what a great food they are.Cheap,tasty very healthy (who doesnt need more omega 3 in their diet?) convenient.Best mouth watering suggestions,just on buttered toast mashed or with sliced egg in a sandwich,or with butter in a baked potato.yum.

    this thread is brilliant. OH has just announced that I am mad to make so much work for myself insisting on making and serving 'proper' meals all the time - and here was me thinking thats what he wanted/expected/would like best.

    So from now on going to pop in a few easy tasty treats in there......

    cheese on toast
    french toast
    baked potatoes
    pasta and easy tomato sauce (chopped toms, onion and cook while pasta boiling)
