Trouble is my Mum would be horrified, if a meal doesnt contain 3 veg then she tries to stuff it in.
Now our fave meal is soup:
diced carrot
diced courgette
diced pork
small pasta shapes
tin of baked beans
Absolutely delicious and they ask for it at least twice a week. Tastes great the following day in a flask as well (although it has to be fairly wide-necked to get it out)
And look, 3 portions of veg too!
Sometimes i also add very finely chopped green beans (because this is currently the only way DS1 will eat green beans but hey, as long as he eats them!!)That's Numberwang!0 -
Tinned tomatoes and bacon fried together, my daughters' favourite!
I do a corned beef casserole too:
Tin of corned beef
Couple of large potatoes
One onion
Some peas and an Oxo.
Slice the potatoes, onion and corned beef. Layer up with corned beef, pots, and peas and onion mixed. Pour over an oxo, stick in the oven till pots are soft. Delicious!I Believe in saving money!!!:T

A fave of mine is stuffed peppers (with spicy rice)
Whilst rice is boiling, fry chopped onions, mushrooms. Add some garlic, salt, pepper and a teaspoon of chilli and a teaspoon of curry powder. Add some chopped cherry tomatoes and finely chopped chillis. If you have them add some sesame seeds and pine nuts to the mix. Fave pudding (well ,about only pud I ever make cos its quick) Bread and butter pud.Always have marge ,eggs,milk,bread and dried fruit in cupboard and as we usually try to eat wholemeal bread (which to me doesnt taste nice in this dish) i always keep a couple of slices of white bread in the freezer to make this.
Butter two slices of white bread(or marge),cut diagonally into quarters,put in bottom of dish sprinke couple of desert spoons of sugar and a good handful of mixed dried fruit.Beat together 2 eggs with about a third of a pint of milk ,pour over,cook for about three quarters of an hour on gas mark 6,Melted bitter marmalade tastes great poured over the top too to caremelise.0 -

Sausage stew:
Bake about 12 cheap sausages in an oven dish. Parboil some veg - parsnips, carrots and/or swede - whatever you can get cheap at the supermarket.
Chop an onion, 2 cloves of garlic and a leek and fry in a pan with a dash of sunflower oil. When soft add about a tablespoon of plain flour and a teaspoon of each chilli powder and paprika, and mix in. Add a tin of tomatoes too.
When hot add the leek, onion and tomato mixture and the parboiled veg to the oven dish, removing the sausages and cover with foil. When everything is cooked put the sausages back in and heat through.
Serve with toasted pitta bread or garlic bread.

You are absolutely right, A Fish Finger sarnie with tom sauce cannot be beaten! (Also, low in points if you are doing weight watchers like me!)0 -
