    Nutty Chicken

    3tbsps sunflower oil
    4 skinless chicken portions
    2 shallots chopped
    1 tsp ground ginger
    1 tbsp plain flour
    425ml/1.5 fl oz beef stock
    2 oz walnut pieces
    grated rind of 1 lemon
    2 tbsp lemon juice
    1 tbsp black treacle
    salt and pepper
    fresh watercress sprigs to garnish

    Heat oil in frying pan. Season chicken with salt and pepper & add to pan. Cook over medium heat turning occasionally for 5-8 mins until lightly golden brown. Transfer to slow cooker.

    Add shallots to pan & cook stirring occasionally for 3-4 mins until softened. Sprinkle in ginger and flour stirring constantly for 1 min. Gradually stir in stock and bring to boil stirring constantly. Lower heat and simmer for 1 min then stir in nuts, lemon rind and juice and treacle.

    Pour sauce over chicken, cover and cook on low for 6 hours until chicken is cooked through.

    The malt loaf sounds nice, reminds me of sunday night tea when I was a child, a big pot of tea, toast and malt loaf. Is it easy to make?

    I forgot to get veg for today yesterday, needed bottled water for work (got a really good deal) and got some bread. Mr AJM did the shop so that amount is really good for him.

    Haven't got time to read the other diaries tonight as I have only just finished work so will have to play catch up tomorrow as I WILL finish early(ish).

    When I started OPing I put on my account that I didn't want to reduce our payment or the term, just keep going but today we have a letter telling us the bank were reducing our payment however we decided to get them to reduce the term after a chat. I rang them earlier and based on what we have already paid we have knocked 3 months off the original term. If we were to pay £500 a month off from now and the interest rates didn't change we would be mortgage free in 9 years and 7 months. Mr AJM was quite excited by that when I told him, we are going to try and get as close as we can and see how it goes. Everytime we pay over £500 the bank are going to write and let us know the new term :j
