With DH out of the country atm, 2 children (one doing SATs), large garden, hatching eggs, PT job, builders taking my roof off, my favourite meal is anything cooked by someone else, a large glass of red, and then tidied up by the faries
Seriously, I love pasta - spag bol, meatballs, lasagne are my top 3

I'm with PenPen, anything I don't have to cook or clear up, preferably with a glass or two of vino:rotfl:
And seriously I'm still with PenPen, pasta:D Pasta with tomato based sauce, pasta with creamy sauce, pasta with meat, pasta with veggies, pasta with oil and chilli. In other words pasta with virtually anything:rotfl: ( I really should have been born Italian!)

Roast vegetables and cous cous - but for me with no children complaining about what they like!!
So peppers, mushrooms, courgettes, onions roasted with a bit of olive oil. Put some cous cous in a measuring jug with a vegetable oxo, add some boiling water leave to fluff up and then stir.
Mix roast veg, cous cous and if youve got them some chopped up sun dried tomatoes - yummy, and because both of my kids hate most of these veg its a real "me" meal!!

I've been lurking alot lately up here and have had some great tips and ideas for cooking and meals mainly - thanks.
I'm just a bit bored with the usual meals that we seem to eat.. we love a roast dinner, steak, chicken curry's, shepherds pies, chicken tikka wraps, chilli and spag bol (bit bored with these now).. my kids like Tuna pasta bake and we all like a homemade soup... I would ideally like to make more vegetarian meals (to have a break from meat really) so any of those would be really interesting. I have more time on my hands than I've ever had (my youngest has just started full time school) so want to dedicate more time to the kitchen and cooking and baking.
Which is your families fave meal? anything a bit different from the norm or veggie very much appreciated.

We love sausage casserole with quorn sausages. Use a cheap sausage casserole mix and add a tin of baked beans, chopped onion, mushroom, pepper, peas and whatever else I have lurking in the cupboard.....it's yummy with the quorn sausages as they soak up loads more of the liquid. Also nice if you add some dumplings just before if finishes cooking...........If Life Deals You a Lemon - Make Lemonade!! :j0

This is one of my faves - adjust ingredients to taste, or chuck in extras as you like. But the basis is:
- fry onions
- chuck in tin(s) of kidney beans. When they've warmed a bit mash 'em
- in with tin(s) toms
- creamed coconut and lime juice
- chilli powder, hot stuff, tabasco - whatever to whatever heat you like
We sometimes eat this with just rice or sometimes with soft tortillas. You could serve it with grated cheese, sour cream, homemade guacamole (squiched avocado), shredded lettuce....mmmmm!!!!
