I love this one: Sweet Chilli Chicken Breasts
Take one or more chicken breasts (depends how many you are cooking for).
Chop up a red bell pepper into strips.
Take a can of pineapple chunks in JUICE (or rings, cut up into chunks).
Chop a whole or part of a red onion into half-rings (depends how many breasts you are cooking).
Mix together some Sharwoods sweet chilli sauce
http://www.sharwoods.com/range/product_details.aspx?rangeId=1&productId=106&productTypeId=16
with some light soy sauce and some of the pineapple juice from the can. Use approx 1 tbsp of sweet chilli sauce for every 2 breasts and add soy sauce and pineapple juice in roughly equal proportions to make the sauce runnier.
Lay each chicken breast on a piece of tin foil and cover with chopped onion, peppers and pineapple. Then spoon over the sweet chilli sauce mixture. Wrap the foil tightly around the chicken breasts and place on a baking tray.
Cook at Gas 6/ 200 degrees for 35 minutes (for average sized breasts).
I serve this with green veg and new potatoes or maybe mash or you could even try rice.0 -
I like making roast chicken because I love the smell and the taste and the way no-one complains when it's served!!
I also like making things with yeast as I love watching it all puff up as the yeast works, while you do nothing for an hourThough I don't get much time to do this - breadmaking is on my list of things to do. I like making yorkies and toad in the hole for the same reasons.
I like making omelets because to some people it's a meal out of "nothing".working on clearing the clutterDo I want the stuff or the space?0 -

To start us off, I think I would have to say roast chicken with all the trimmings (inc hm bread sauce and stuffing) would be mine, working out the timings of all the bits and making the roasties and saus in bacon etc- love it!! (Does that make me really sad?!)
Close second would be risotto with the left over chicken, something about watching the rice grow! (OK that probably is just sad!)
PS: Sorry if this has been covered before, I did to a search, but
Whilst I was waiting for this thread to load, I thought Risotto and Roast Dinners :rotfl:
I've never done it with chicken thoughMade a mushroom one this week and courgette one before that.

Sorry Lemonade_Money, just re-read this thread and realised you were asking me a question- doh! Well it is friday!
Has to be Delia's bread sauce recipe for me:http://www.deliaonline.com/recipes/traditional-bread-sauce,1053,RC.html
We all seem to like to cook things that take time to assemble and that involve peeling, chopping and stirring before 'leaving alone' for a bit for the magic 'cooking' to happen - is it just me that uses this time for a nice glass of wine?!0 -
Linda32 - spooky! Risotto's are great though.. think I know what I'm having for tea tonight!0

I've always thought there's something immensely satisfying about watching your Yorkshire puddings rising in the oven!Official DFW Nerd No 096 - Proud to have dealt with my debt!0

It has to be cheese fondue for me... mmm.. we don't do it very often, but it's lovely!! And when the remainder goes cold and sets, I'll take it in sandwiches for work the next day. Absolute killer in terms of fat content though! I also like making sweets when I have time and syrup sponge pudding too: with that it's just the waiting in anticipation for it to be ready and resisting the urge to peep under the greaseproof paper!:staradmin:starmod: beware of geeks bearing .gifs...:starmod::staradmin:starmod: Whoever said "nothing is impossible" obviously never tried to nail jelly to a tree :starmod:0

I think my fave is lasagne, because I enjoy eating it. I have had to reduce how often I cook it as DP was getting a bit sick of itOne day I might be more organised...........

Fish pie, my Mum used to make it and, although I don't do it very often, it remains the ultimate comfort food.
My other favorite has to be roast chicken, love the way you can get lots of meals from one bird. Start off with proper roast; decent left overs go into sandwiches, stirfrys or salads; the rest gets added to white sauce (or variation) and become pies for the freezer. Then the whole lot gets boiled up for stock. I love the way every bit gets used and nothing wasted. Just need to think of something to do with the bones (that may be going slightly too far!).0 -
One of the really simple things I like to make is beans on toast. Making sure i have a nice fresh loaf, and the best butter, and I arrange it perfectly!
Not so much cooking but I get immense satisfaction from my growing! I planted some seed the other weekend they are sprouting now and I know when I have fresh mangetout out of the garden lighlty steamed that will be SUPERB! Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind
This Ive come to know...
So if you agree have a drink with me, raise your glasses for a toast :beer:0
