Just as a by the by - last AF order contained three tins of tomato puree. I was hoping to get back into making home made pizza/bruschetta and three small tins would be nice. They are not three small tins, they are three vast, huge tins and need using up.

So I will be rummaging to find ideas and I can see a lot of tomato type recipes on the horizons, also considering freezing etc, but I am less than impressed. Must be tough with myself - will throw if not used! Also need to properly store the tray of baked beans I bought from Makro. It is very worth it, the beans are one of the few things that actually are cheaper (OH is fussy about beans).

Actually glad that I have some bulk buys, however, as the kitchen door has ishoos. The lock is currently jammed shut, but it is getting a bit variable, so I am keeping it barricaded. Humungous boxes of Fairy washing powder are very useful apart from the laundry.

If you have freezer room and like tomatoe soup there is a really easy recipe using puree that takes practically no effort if you are busy or not in the mood to cook. If you can't find it I will post it if you want it.

I am knackered just reading Jojo's post

    :)
Yep...still at it, working out how to retire early.:D....... Going to have to rethink that scenario as have been screwed over by the company. A work in progress.

I'd like the recipe, please - I've looked loads of times at the big tins from the Turkish supermarket and wondered whether I could justify it.

(And I use quite a lot of tom. puree in stews and tagines and whatnots - lovely for the taste, nightmare for any spills on clothing).

Right, it's from a catering recipe book so this is for 10 portions, but will be ok if people have hods of puree.
    125g butter or marg
60g bacon trimmings (optional)...I never used this.
    250g diced onion
    250g diced carrot
    125g flour
    250g tom puree
3 and half litres of stock
    Bouquet garni
    Salt and pepperm

Melt butter in large pan. ADd bacon, onion, carrot and brown lightly.
Mix in flour and cook to a sandy texture. Remove from heat and add tom puree. Return to heat and add stock. Add b/garni and salt and pepper. Simmer for 1 hour. And skim as required. Liquidise or pass through a sieve. Return to pan and correct seasoning.
    Add basil,corriander or chives.
You can also add cream at this point and serve (or freeze)

You can also substitute half and half with fresh toms. (2-3lb).

Also you can add juice and zest of 1-2 oranges , cooked rice or 200g of sliced potatoe with the stock , but I think it it much richer without rice or potatoes.

If you are a real foodie and want to spend all day de-skinning and de-seeding tomatoes you can use just fresh, this is time consuming though.

    Enjoy :)

Hell , forgot.....if you want it to have a kind of sweet and sour taste you can reduce 100ml of vinegar with 35g of casror sugar until it is a light caramel and mix this into the finished soup.

I think I have covered it all now.......bit of an obsession of mine cooking...wouldn't dare go onto the cooking threads as would never get to work.

I cheat. I use tamarind paste/ketchup for that.

Or the vinegar from pickled beetroot.

The recipe sounds fab Calico, I will give it a try. :T

I've bought stuff from AF and not checked the weight of tins, so had 3 catering size tins of peaches once, another time I ordered what I thought was 3 single jellies and got 3 packs of 12. :o

:D Think positive; if you want to have a wobble, you'll be well-equipped!

I'm going to slope offline to find out whodunnit in my library book and then get some good sleep because there is sure to be something on/ in/ around the lottie which could be decluttered tomorrow. Perhaps some snails will have crept back onto the killing fields from the derelit plots next door.............*evil grin*
