Cheese and potato pie - take your pick from this lovely lot! I'm going to top mine with leftover puff pastry.
I changed my mind about the caramelised onion and goats' cheese tarts and made these instead because I'd not made what I planened with the courgettes. Really easy and totally scrummy:
Courgette and goats cheese tarts:
Roll out puff pastry thinly and slice into 4" squares. Set on greased oven trays. Chop approx one small courgette per person and fry in olive oil, garlic and lemon juice. (I did it with the lid on to keep the moisture in.) When soft, drain and add to top of pastry. Crumble a little goats' cheese on top and bake at 180 degrees until pastry is puffed up round the filling and golden. We had it with salad.
Spinach and goats cheese pizza - add quick tomato sauce to the base (DH does our bases in the bread maker.) Steam the spinach then drain well and chop. Add on top of the tomato sauce then slice or crumble goats cheese on top. You don't need mozzarella on this one - it's lovely as it is. It takes about 12-15 minutes on 180 degrees. We make 2 pizzas, one with just a bit of extra garlic in the sauce and have it as a tomato garlic bread.May all your dots fall silently to the ground.0 -

Doh! I meant the breadmaker. Sorry! The pastry squares were just the tarts I mentioned above, but I was going to do them with caramalized red onion and goats cheese instead of courgette and goats cheese. Whatever's available really. If you like sundried tomatoes that works too, or olives and feta.May all your dots fall silently to the ground.0

Edit, and I just roast the tomatoes in Morrisons olive oil for about 10 minutes. The tomatoes we get are really tasty so I don't add garlic or any herbs.May all your dots fall silently to the ground.0 -

I'm dabbling with shortcrust pastry. There's a great thread giving tips that I'll link to later. I havent' tried puff pastry though. I understand that's a bit of a faff, although Delia has a cheats' version that I'll look out too.
Tartrex is just yeast pate. I like the mushroom one. You get it in tubes.May all your dots fall silently to the ground.0 -
Just spotted this thread, moseyed on in from elsewhere.
I have to ask... GR, where have you been all my life?? As a veggie always on the lookout for healthy low-fat recipes (I'm doing Slimming World too), this looks a fantastic thread.
Now, to go back through the pages to find this galette I've read so much about....0
