Thanks for the lentil lasagne recipe gingham ribbon. I think I'll make that tonight.
I've also got the Vegan Cooking for One book and years ago when I was single I used to use it until my cooker stopped working, my landlord didn't/wouldn't fix it, so I ended up eating toast for a year until I moved out! It's a very handy book though because it gives shopping lists for each week, and makes sure there is no waste. In fact I might just dig it out and start using it again - just multiply everything by about 4.0 -

There was a substitution this week - a papaya (? I think!) for the grapefruits. Shame because I love grapefruit.

I changed my plans a little today and made the galette with the purple sprouting broccoli and cheese. It worked well.
I used the leek in the braised celery as I'd made a carrot salad for our guests last night so had none left. It worked well too and DH (who apparently doesn't like celery) went back for seconds! However, the plate was a bit too green for me and I'd still go for the roast tomatoes with the galette.

Made the Lentil pate, It was delicious. I don't know if you are aware, but if you cook it, it makes a tasty lentil loaf.
I have posted this link for a nut roast, which I have made. Instead of the nuts listed I used some peanuts I had in the cupboard.
