    Banana bread

    165g sugar,
    1 egg,
    150g s/r flour,
    3 ripe bananas,

    Mix all ingredients together, pour into a loaf tin and cook for 30 mins, 180C


    I also add somme nuts (walnut or peacan) if I've some in the cupboard.
  • what are they like when they have been frozen, can i not peel and chop them then freeze then in a food bag x

    Banana Ice cream

    Banana Flapjack

    6 oz. butter
    5 oz brown sugar
    8 oz rolled oats (ie ordinary porridge oats)
    2 small/ 1 large banana, mashed
    4 oz raisins (or chopped dates)

    makes about 16 allegedly, I always make double quantities and they don't last very long!!

    Melt the butter in a big pan. Take it off the heat and mix in all the other ingredients (oats last). Then pour into a baking tray and cook for 20-25 mins in a pre-heated oven, Gas 7, 220 c.


    Frozen Banana yoghurt
    4 x overripe bananas
    500ml pot low fat yoghurt
    honey/sugar to taste (I used 5 teaspoons)

    Put all ingredients in a blender and whizz. Put into a tupperware pot in the freezer. Wait till it is all slushy then whizz in the blender again - will go really creamy. Put back in freezer or individual moulds until fully frozen.

    Ooooh i was looking for a good flapjack recipe for the kids and they love banana's .... but the best bit is that i already have all the ingredients ... yay.

    Yup you can do this too. They are fine when i do this. I used to half banana length ways and put it in the freezer for my fiends wee boy to chew on when he was teething. Skin off and freeze, always worked fine.

    I've pinched it from the Carnation Caramel tin. :o


    9 digestives biscuits crushed and mixed with 3-4oz of melted butter. Pressed into the base of a flan dish, cake tin, up to you. (I use a loose bottomed cake tin about 7" diameter) Chill in fridge for about 20 minutes

    Spread tin of Carnation Caramel on the base.
    3-4 sliced bananas on top of the caramel
    Add whipped cream on top of the bananas
    Few slices on top for decoration.

    Keep in fridge till you serve.

    I freeze over-ripe bananas whole in their skins to use in muffins and cakes. I defrost them for about a minute (depending how many there are). They come out of the microwave extremely wet and when you plop them out of their skins they look exactly like giant maggots:eek: However, once mashed or blitzed with a blender they are perfect for baking.
