    I've got some bananas left over and they are virtually walking out the door! :eek:
    I was wondering if anyone had any recipe ideas for using these up? ;) Thanks!

    2 Cups of sugar (500 ml)
    1 cup butter (250 ml)
    6 ripe bananas - mashed (3 cups)
    4 eggs - well beaten
    2-1/2 cups self raising flour
    2 tsps baking soda
    1 tsp salt

    Preheat oven to 350 f degrees. (180c)
    Cream the butter and sugar until it's light and fluffy.
    Add bananas and eggs and beat until well mixed.
    Sift dry ingredients three times.
    Blend with banana mixture - but do not overmix.
    Pour into lightly greased loaf pans.
    Bake for about 45 minutes - test with a skewer to see if done.
    Cool on rack for 10 minutes before removing from the pans.

    They freeze well but never really make it to the freezer!

    This is a really good recipe for banana bread, I've made it so many times and it freezes really well too.

    (I freeze the bananas too, they go really soft when you defrost them but they work brilliantly in cakes, muffins etc)

    If you freeze the bananas, take the skin off first. The first time I froze theem I left the skin on and got into a horrible squodgey mess defrosting and peeling them.

    As the weathers so nice at the moment you might be getting the BBQ going? Then take your bananas, slice them longways down the middle and put on a square of foil and put 3 chunks of Toblerone and a couple of Marshmallows in the cut you've made, then pull the sides of the foil up and scrunch around all the edges to seal but keep them upright and put them on the BBQ at the end as it's cooling down...leave them on there till everythigs melted in the middle and eat...they're lovely!!

    Put the skins under your roses - the potassium works a treat.

    BBQ them in their skins - make a slit in the skin and pour rum inside and maybe put some dark choc in there too. Wrap in foil and bake. Peel and enjoy. Its yummy with cream.

    Found a great "old banana" recipe on an American website earlier this week for frozen banana yoghurt - it is so scrummy (and healthy!).

    4 x overripe bananas
    500ml pot low fat yoghurt
    honey/sugar to taste (I used 5 teaspoons)

    Put all ingredients in a blender and whizz. Put into a tupperware pot in the freezer. Wait till it is all slushy then whizz in the blender again - will go really creamy. Put back in freezer or individual moulds until fully frozen.

    hi all

    im defrosting my freezer and found a load of banannas they are now all squidgy so any ideas??


    im trying to be a little healthy so bananna cake is off ideally (although i love it!!!)

    i use frozen bananas to make smoothies.not sure what else you could use them for as i only recently discovered you can freeze them.
