    Hello everyone.
    Does anyone have a nice simple fish pie recipe that will appeal to a family who hardly eat any fish! Living by the sea we have access to really fresh fish but usually only buy it frozen in breadcrumbs from the supermarket! I've never been very confident with fish and am never sure what to serve it with.
    I had a look on the recipes but couldn't find one on there.:confused:
    Any help would be appreciated.

  • spent another £12.15 in Asda today, but that should be it for this month, but I won't post my final total until Friday, but fingers crossed for an underspend this month of £1.35!! Enjoying reading all the recipes. We had roast 1/2 chicken tonight for tea and wondered if someone could post how they make stock from the bones please. I don't know what to do. Thank you:rolleyes:

    Someone has probably answered you by now but as I'm still trawling through I'll post my recipe for stock!

    1 Chicken carcasse (picked clean in my house!)
    1 carrot chopped
    1 onion quartered
    1 celery stick chopped
    1 leek chopped
    1 bay leaf
    4 whole peppercorns
    1 tsp salt (less if preferred)
    1.5 litre cold water (I'm not sure about the accuracy but I just top up to the carcasse)

    Bring to the boil and then simmer for 2 hours. Drain the stock from the carcasse and veg. Then put the stock back into the pot and bring back to the boil. Simmer until it's reduced to around 300 mls (again, this is not totally accurate - just so it's small enough to fit into my freezing pot!). Allow to cool slightly, skim off the fat and pour it into a container for freezing/fridging. Allow to cool completely (it will go jelly-like) then freeze.
    If you want to use it for soup straight away, then you don't need to reduce it quite so much. I get around a pint of stock from a carcasse so when I defrost it for soup I just add enough water to bring it up to a pint.

    By the way I tried doing the jacket potatoes in the slow cooker wrapped in foil as recommended by a few of you but although they tasted ok-ish they looked really odd, sort of purple coloured! Was it the type of potato I used do you think?

    I will probably have to buy milk in the week but I hope that will be all.

    JayneC here is my Spinach and Ricotta Cannelloni recipe:

    For 4 people:
    20 small cannelloni tubes
    250g ricotta cheese
    150g frozen spinach, defrosted and with liquid squeezed out
    ½ small red pepper diced, 2 spring onions (or use a small ordinary one)
    ½ - ¾ pt white sauce
    5g grated parmesan

    Mix together the ricotta, drained spinach, pepper and onion, and season with salt and pepper. Lightly grease an ovenproof dish. Fill the cannelloni tubes with the cheese and spinach mix (I use an icing bag as this is less messy than spooning it in!) Arrange the tubes in the dish and pour over the sauce and parmesan. Cook at 190 C or gas mark 5 for 20-25 minutes or until cooked through. Serve with green salad or vegetables of your choice. Enjoy!

    My month ends on Thursday and am hopeful of being under budget – fingers crossed!

  • Havent been able to post much this month due to family commitments/illness etc.

    Well out of a budget of £200 i ended up spending £210. I was underbudget until i went to sainsburys last friday, but there were some good multi buys on stuff i usually get, and am away for a couple of days (mum and dad have both been in hospital) so bought a couple of things that would be easy for dh or dd to get for dinner.

    Please put me down for £200 again next month. I will crack it:o
    My finances are work in progress.

    Hi all,

    I started March today (well cheated and started yesterday!!) and not got off to the best start! Had to take DD3 to Netball trials with cadets in York yesterday which is a 50mile each way trip so decided to take DS2 swimming at water world and then to Wacky Warehouse pub for lunch to keep him amused and me out of the shops (where I probably would've spent less actually, lol) whilst we waited for her.
    Lunch cost £16.20:eek: and then spent another £2 at the garage as DD3 was still hungry after her packed lunch!

    On the up side I found that petrol was 5p a litre cheaper in York so filled up the car whilst I was there;)

    Went to Tesco today and spent £15.61 so that's £33.81 total already.

    Think I've already said but just incase I'm in for £240 in March, please Mrs Mc.

    MARCH IS HERE!!!! (for me anyway)
    BEen out for a late night wander round somerfield - spent £38.13 and then went to Mr Ts on the hunt of a doughnut machine which they did not have but spent £25.92 on other bits and bobs. So thats £64.05 gone out of my MArch budget already!!:eek:

    Thanks Lil Me for all your hard work; I'd like to 'declare' on £173.83 for February, so £13.83 over :rolleyes: My OH assures me we now have about 14 bags of cat food though :o
