    Hi all, updated sig to reflect a spend of £11. It was meant to be a nsd but oh finished his fishing early so of we went, popping to home bargains tomorrow for toilet rolls and also need prunes. No comments please!!!. I will go over budget but not by more than £15 (i hope).

    Hey!

    A cheeky nip into Lid*s today for a spend of €5.95. Not bad considering I got eggs, bananas, doggie food and bran flakes. I'm in ireland so stuff is always dearer!
    Updated my siggy to reflect it..

    However, like a div I forgot to buy fresh milk, baked beans or cereal bars (cos I do slimming world), so I'll have to face the shops again tomorrow but I'm hoping to have a NSD on monday and tuesday to make up for it!

    craigywv I always keep a chili in the freezer, it is so handy when you need a meal in a hurry, can be served with rice, jacket potato of bread. One really easy recipe that my kids love is mince with a tin of kidney beans in chili sauce - you can put other veg you have around such as onion chopped carrot tomatoes etc if you want. This makes a really mild chili, if you want more bite you have to make a proper one.

    Who told you not to freeze the mince? Mince can be frozen raw, but if your mum or the butcher said not to it may be because it has already been frozen and then defrosted in which case you must cook it before freezing.

    if its from the butchers it will very very probably be fresh. So it can be frozen.
    or do you remember the TV programme economy gastronomy where they batch cooked a load of mince, it may give you some ideas.

    to make burgers, you can mix it with seasonings and onions and form into patties and grill or gently fry or even do it in the George Foreman.

    You can also add in breadcrumbs and an egg to bind.

    A recipe I quiet like is to form the mince around a cheese chunk, any cheese but mozzarella is good, as is cheddar and then cook. I make my own recipe but this is to give you an idea

    Helped my nan with her shopping this morning and ended up spending £12.46 in Morrisons, did manage to get a huge bag of Walkers half price, so DD's lunches are sorted for the next 2 weeks.

    Also picked up some fruit that was yellow stickered that DD's had for pudding as well as some ham that I have frozen for pack lunches.

    I feel I can justify all my spending today - no treats only practical food - so feel happy with this.

    And I'm actually looking forward to doing some batch cooking tomorrow. :D

    DD and I went out to Brighton today and ended up having a light meal, so £6.48 spent and I now have £48.43 left for the month. Hmm....
