PENNE, ONION AND COURGETTE BAKE
Serves 4

375g dried penne
2 red onions, thinly sliced
2 large courgettes, coarsely grated
200g canned sweetcorn kernels, drained
4 plum tomatoes, roughly chopped
Salt and freshly ground black pepper
250g fat free natural cottage cheese

Small handful of fresh flat-leaf parsley, finely chopped
180g reduced fat cheddar cheese, grated
2 little gem lettuces, leaves separated and tossed in lemon juice
Preheat oven to 200 degrees C, fan 180 C, gas mark 6
Cook pasta according to instructions, adding the onions, courgettes and sweetcorn for the final 3 minutes of cooking time. Drain well then transfer to a baking dish. Add the tomatoes, season and stir well.
Put the cottage cheese and eggs in a food processor and blend until smooth. Mix in the parsley and three quarters of the cheddar cheese, then stir the mixture into the pasta.
Sprinkle over the remaining cheese and bake for 15 - 20 minutes or until bubbling and lightly golden. Serve with the dressed lettuce leaves and add a twist of black pepper.
Synns per serving: green free
Add 6 synns if not using cheddar cheese as a Healthy extra0 -

Well done you :T. My target is 8st 7 so not too far off yours.
It's really strange but I was beating myself up for absolutely ages cos I just wanted to be able to say that I had lost 3 stone. I can't say why but I was fixed on that then one day I was saying to a lady who I was weighing in that she looked absolutely great and she should not be worrying about what the scales said but concentrating on how she felt she looked in the mirror. She agreed that she felt really pleased with how she looked and altered her target. I then realised that I should be taking my own advice!

OMG:eek: I have been counting these as free, I have one every afternoon in work with a chopped banana in it; I am gutted as I checked these against muller (well only the saturated fat) any idea on any the rest of them as I get them sometimes as well, I should have been adding 24.5 calories a week to my total when I was counting them for free

I thought it was fab as they were only 31p compared to mullerI got some rowan Glen toffee yogurts for 3p at Mr A tonight, better get on & check them as well.
Made up my syn box for the week, have told kids not too touch as its mine
Going to try upload a pic, been good tonight, had chilli & rice to drink I had diet irn bru, not a glass of wine.
Used my HEA for 45g low low cheese with some pickles. :A
Med mum whatever keeps you on track.....do it. As I have said my downfall is wine, just a habit having a wee glass or two at night but a habit that has to be broken so wine is in said syn box and will stay there until the weekend.
I had 14 of them last week :eek:

Yes, due to last nights dinner mishap, DH said you can have the fajita chicken with me, looked at ingredients as front said chicken with tomato, peppers, herbs, ingredients had rapeseed oil butter etc :eek:
I am subscribed so I got mine throught the door Wednesday. They don't sell it in the shops in Scotland ?
I saw it the other days in Sainsburys I think.
Think it was the July one.
So they must sell it in Scotland.

I loved this thread earlier in the year, but then had quite a long period of illness. I lost all focus and even when I eventually started recovering again in late May, the struggle of going back to work over took everything else. I have had a reasonable week this week (first one!) , but am determined to join you all again. I miss all the wisdom and kindness on the thread.
I am away on a visit to London next week and am staying in someone's house, so won't have a lot of control over what I eat. After that I will check in regularly again. I have missed you all0 -

Not been a brilliant day but could have been a lot worse. I think because I put on, on holiday, I'm back thinking I should be trying to lose when i really need to STS.
B: HEB toast, baked beans, fried egg, mushrooms, HEA milk for teas
L: banana:obaked cod, SW chips, cauliflower cheese with tomatoes
Syns: weekend wine:) and the xtra cheese, milk, marg and cornflour in the sauce for cauli.
Sorry to hear about probs wth DS, mm. I've got everything crossed that you're going to complete your excellent week and it'll motivate you for next week. I can visualise you so much slimmer for your trip to Scotland.;)0 -
