  • Hi Everyone - hope you're all having a great holiday weekend in the UK and hope the weather isn't too bad for whatever you're planning doing.

    Here it's hot and sunny (you can get too much of a good thing!!!!) and I've just made a mental note to myself to remember to drink lots of water. I really don't think I'm drinking enough and have had a few days where I've been feeling really light headed.

    B - Vegetable & Sweet Potato Bake (LO) - HEA
    S - FF vanilla yoghurt, banana, berries
    L - Tuna Salad - 2 syns for light mayo
    S - 2 slices WM bread, sliced pastrama - 2 syns for light mayo
    D - Roasted Cauliflower on Veg Risotto

    keeping the syns low today to make up for the extras that I had yesterday!

    Morning all - another Sunday, another fuzzy head... I think I'm getting too old for nights out though cos I am knackered today. We have had a spate of nights out (and in) over the last month, one more next weekend then that's it until we go on holiday on 9th July.

    Had 4 large glasses of red wine last night then came home and scoffed a packet of quavers - well I realised I'd eaten them when I found the empty packet this morning :o

    Back on the tank today though, aiming for 2/3s superfree today before WI tomorrow to try to negate last nights wine. I'm at home with DS who is cutting some more teeth the wee soul so he is grumpy and just wants to cuddle in on the sofa. DH & DD are both playing in the pipeband today so they were away early doors and wont be back until later.

    I meant to ask if anyone knows how to make a tasty couscous dish? I love the ready made moroccan or mediterranean couscous salads you get in Tesco but they're made with oil so are quite high in syns; I bought dry couscous and tried to make it once before but it was revolting.

    well after saying hello I then ended up spending two days eat anything I wanted (read very very bad and off plan!) but with 8 weeks to holiday I'm starting a fresh today....
    HEA - Skimmed milk for tea
    B - lean bacon (fat cut off and thrown in the bin before I cooked it to avoid being tempted) tinned tomatoes and a fry lighted egg
    will post the rest of the days food later as I think this might help keep me on track :)

    Have also just done level 1 day 1 of the 30 day shred - OMG I though it would be easy as it's just 20 minutes but it really makes you work hard!

    I find couscous always tastes better if you mix a stock cube into the boiling water first - I use vegetable if I'm doing a couscous salad.

    I also find having some wet fillings help - tomatoes, beetroot, orange for instance (I'm sure there was a couscous and orange salad recipe in a magazine recently) as this also makes the whole meal less of a dry texture.
  • Afternoon everyone.
    BBQ yesterday. Cheesecake, burgers, SW Pimms pizza and beer too, ate till I was full and still under syn :D
    Today lots of super free and trying to get rid of the sweetner aftertaste bleh!
    Done a bit on the wiifit, listed all of my wardrobe on ebay :D plan on doing some zumba later. Not into this shred thing... crazy people!
    BBQ chicken roasted peppers and roasted pineapple (syns?) has just appeared (hubby cooking) yummy yummy.
    Stay focused folks... !
  • Wow it's so quiet on here today - I've missed you all.

    Made a lovely cauliflower and potato curry tonight to round off my day. So far it's going ok, with just one or two slip ups but basically back on plan.

    Well the kids have had pizza n chips for tea and I've had homemade soup and ryvita (polishes halo)

    the soup was really good actually, I just went through the fridge and used what was needing used up....2 potatoes, 3 carrots, 2 onions, 3 garlic cloves, brocolli, italian herb seasoning, veg stock cube, mint & a tin of 3 bean salad for good measure.

    I used one sweet potato and one regular potato. Of course I used Frylight instead of oil. I used half a tsp of dried chilli flakes instead of the whole chilli. I used sweetener instead of sugar. I didn't use the yoghurt or the coriander (I loathe coriander) and served it with vegetable risotto which I had left from Friday dinner.

    It was dead easy to make.
