    You guys are fantastic at coming up with ways to *not* diet :rotfl:

    I was well behaved again today and am just about to have dinner of veggie burgers, reduced salt and sugar beans and a salad. Odd combo, but I'm going for filling without fatty! Planning a nice meal of spicy pork belly roasted with butternut squash, peppers, onion, garlic and partially cooked brown rice tomorrow. Only partially cooked before it goes in the oven, before some wag points out my mistake :p

    Work continues to be crazy busy, which I'm enjoying, just not convinced it will stay that way.

    Off for a driving lesson in the driving rain...

    Any chance of having the recipe details for this one Ed? I quite fancy adding it on to my meal plan next week..... sounds yummy.

    You're making great progress with the driving lessons - how long do you think it will be until you can take your driving test?

    Funny - it's amazing though isn't it - I'm the same, can drive hours on the motorway in a world of my own. It's great thinking/reflecting time - I just hope that I'm still alert if anything as to require my attention!

    I don't follow recipes so much, but it was something along the lines of:

    300g pork belly (cubed)
    1 butternut squash (big chunks, skin on)
    2 onions (diced)
    1 red pepper (diced)
    4 cloves garlic (peeled and crushed)
    150g brown rice (cooked)
    600 ml vegetable stock
    soy sauce
    tsp black pepper
    tsp parsley (dried)
    tbsp red chilli flakes

    Brown pork belly in a little groundnut oil, remove from pan, brown onions and garlic, remove from pan, mix all remaining ingredients bar soy sauce, stock and herbs in casserole, roast with lid off for 20 mins at 190-200 celsisus, add liquids and herbs, pop lid on, cook at same temp for a further 60-90 minutes.

    We got 4 decent portions from it.

    It was even better the second day, like a good chili or curry :) Tonight we'll be having posh bangers and mash (venison sausages, crushed potatoes and onion gravy) as a bit of a treat for being well behaved all week. Will probably see what visiting microbrewery treats Aldi have in stock, but only once I've done my hoovering :D
