What should I do with cod?

I got a bag of cod fillets from aldi last night and plan to have them for tea with mash tonight.

So what should I do with them? I've read on here I think about poaching it in milk.

At home I have, dill, onions, carrots, swede, various dried herbs and spices, sweetcorn and all the normal kitchen stuff like cheese, eggs, milk....

    Make a fish pie, appologies for lack of weights measures and detailed method but basically:

    Steam the cod after cutting it into chunks, make up some white sauce from plain flour whisked into melted butter then add milk and stir as you bring it up to a slow boil. I add Parsley to it as we all love parsley sauce. You can used dried if you can't get fresh.

    Mix the sauce with the fish, spread your mash on top and put a bit of grated cheese on top then stick in the oven or under the grill to brown. Easy peasy tastes great and it looks like you have been slaving away for hours.

    Why not just coat it in herbs with a squeeze of lemon juice - then wrap it in foil and bake in oven for 25 mins. Serve with baked potato (micro wave) or you could wrap veg in foil parcel as well and bake in oven.

    Another fish pie:

    put fish in the a bowl in the microwave with a splash or 2 of milk, cook on high until done (sorry, it's been a long time since I made this, I think it's about 10 - 15 mins)
    Make mash (and cook carrots if they are not frozen or tinned)
    Flake up the fish and add a tub of cream to make a sauce.
    Put fish in a casserole dish top with sweetcorn and carrots (I usually use peas, but sweetcorn and carrots or any other veg you've got would be OK).
    Top with mash, add some grated cheese
    Pop under the grill until the cheese has melted.

    Not half as healthy as Elona's idea but very nice.

    Not here - both myself and Mr TM HATE parsley, although I do like the sound of the fish pie. Will try that soon - spag bol for tea with lots and lots of garlic bread (after school charge loves going home stinking of garlic and giving parents big hugs.:D) Kids, eh? who'd 'ave 'em?)

    It only takes 8-10 mins to poach fish in milk on the cooker top, so I think 10-15 mins in a micro on high would incinerate it ;)

    If you're making a fish pie, poach the fish in milk first with the dill and a bay leaf, and season ... when cooked remove the fish and flake it into a bowl and strain the milk to use it to make the sauce with a roux. Place fish back into sauce, adding peas, chopped hard-boiled eggs, mushrooms etc (whatever you have around ... even cooked prawns!) and top with mashed spuds or thin layers of potato and grated cheese ... whatever takes your fancy :)

    Ooops, told you it was a long time since I made it :D and I hardly ever use my microwave.

    We don't eat enough fish so I was considering getting some cod and doing a couple of these recipes. Thanks for the advise, I'd have ended up with yuky chewy mass of glob instead of a lovely fish pie :o

    Thanks for the advice everyone, there were 6 fillets, plus I have a smoked one from the farmers market so I think I might cook a few in the oven and make the rest into a lovely fish pie.

    Don't worry Galtizz, I wouldn't have known the timings either had I not recently made a fish pie :D

    Ironically, I just switched tv onto food+1 channel and wossisname (Italian guy) was cooking a fish dish (one of Delia's recipes) and it looked yummy!

    Managed to track down the recipe if anyone wants it here :)

    What about fish cakes? Squeeze excess moisture out from cod, put in food processor with cumin, coriander, squueze of lime, chilli and spring onions or fresh coriander. Pulse for a few seconds. Make into little cakes, dust with flour and fry. Serve with salad or steamed veggies.

    Last fish pie I made was about 4 years ago. At the time I liked fish and occasionally bought bulk packs of cod from a fishmonger

    One time the fishmonger had a special offer of a new fish, it was really cheap (like £1 a 1lb) and it was sliced into little chunks and, according to him, it was really nice and meaty, not like anything you've tasted and you really should try it :rolleyes: ! Being young and nieve decided to give it a go and bought some. I made it into fish pie and it was so discustingly YUK I haven't eaten fish since (except tuna or salmon from a tin).

    What was this new and exiting new fish that the fishmonger conned me out of £1 for?
