What should I do with cod?

    Sorry lynz, the title of this thread had me in stitches. It sounds like one of the headlines they read out at the start of the News at night. "More cod questions - urgent: Today ministers met in Downing Street to discuss the latest crisis in my kitchen, where defrosting cod stocks have led to widespread panic among ravenous MoneySavers":rotfl: :rotfl: :rotfl:

    Morning all.

    Have got some lovely cod loins out of the freezer (were fresh when they went in there). Usually we'd just cook them plain and leave it at that, but as I'm now a 'lady of leisure' I have the time to do something a little bit more daring.

    Also usually we'd split one large one between us....but OH slung 2 fillets in the freezer in the same packet. So now I have to work out how we can eat up 2 of them.....or eat 1 and re-freeze 1.

    Am looking for suggestions as to what I can do with them. No suggestions of batter / breaded & chips please

  • I had a beautiful dish in a restaurant which I have replicated a couple of times.

    Cook the fish as you normally would plain.

    Mash some potatoes with cheese and spring onion.

    Pile fish on top of potato mound, and pour over a hollandaise sauce yum! Serve with green beans
  • Alternatively Jamie Oliver did a lovely one.

    Put the cod on a bed of sliced runner beans. Top with pine nuts and pancetta and cook in the oven until cod cooked, about 20 mins. Serve with new potatoes

    Another yum!

    COd is lovely topped with pesto and baked in the oven with cherry tomatoes.

    There's a great F word recipe that involves baked cod with a lemon and herb crust. Great served with mash and white / parsley sauce. It is on the channel four f-word website

    I have promised my Mum I will make her cod in parsley sauce today which was a favourite of my dear old nan - she used to make it for us all the time before she went off to the all day party in the sky!.

    My nan used to cook the fish in the milk and then make the sauce with the left over milk.

    I've done a search on here and the www but cant find a way of doing it like this - I can find a parsley sauce recipe and a baked cod - but not cooking the fish in the milk way.

    Anyone able to help?

    I could just bake it and then make the sauce but would like to try and do it the way my nan did - I always knew I should have paid more attention.
  • Not a fishy person myself, but what you are looking for is a recipe for poached cod. You simmer the cod in milk until it is cooked then use the milk to make a white sauce into which goes a load of parsley (I think).
    If you think reality makes sense, you're just not paying attention!

    What I do for cooking fish in milk is to take about a pint of milk (depending on the size of the fish), place in it half an onion, some peppercorns and a bayleaf. Bring this to the boil, then pour over the fish in a heatproof dish. Cover with foil and leave for about 10 mins until the fish is cooked - to check if it's cooked, poke the fish with a fork. When it's cooked, it will flake easily. Drain off the milk and use it to make the sauce as usual - I'm afraid I don't have a parsley sauce recipe to hand.

    This is how I make cod in parsley sauce:

    Put half a small onion, a few black peppercorns, a bayleaf and milk into a saucepan. Add the cod. Simmer gently until the fish is cooked. Remove the cod, cover and keep it warm. Strain the milk, discard all the bits and put the milk aside.

    In a saucepan melt a good knob of butter, stir in about a tablespoon of flour and allow it to cook gently for a minute or two. Gradually add the milk left from cooking the fish, stirring continuously with a balloon whisk. Turn the heat off and let it simmer for another minute or two before adding chopped parsley and a squirt of lemon juice.
