Does it have to be cod? There's not a lot of it left in the oceans due to overfishing, and lots of other kinds of white flaky fish are just as tasty and nutritious and cheaper too without making something extinct. You'd never guess they weren't cod.
If you haven't already bought it, or next time if you have, try hoki or pollock - remarkably McDonald's is actually doing something good for once by using these in it's Filet-O-Fish rather than more threatened species.
Sorry, this is my OH's current obsession and it's rubbing off on me!Please don't think I'm having a go at cod-eaters, it's just there are really good alternatives out there!

Whats the easiest thing to make? Must be nice lol
Any ideas for usual storecupboard stuff greatly received! I did look in the index but couldnt find any fish recipes

So if you agree have a drink with me, raise your glasses for a toast :beer:0 -
Ok, its fairly simple and this is off the top of head.
Defrost the cod beforehand (just because my times are for unfrozen).
Preheat the oven to 200 deg C
Stick a couple of slices of bread in the blender to create bread crumbs, perhaps add a couple of cloves of crushed garlic.
In a mixing bowl drizle olive oil and perhaps some lemon juice, just enough to make the bread crumbs sticky. Coat the cod in the breadcrumbs. Not only will this make the cod taste nicer but will also prevent it from drying too much during cooking.
Place it in the oven on an oven tray for just fifteen minutes. (the oven must be hot beforehand otherwise the fish will not cook!)

This was my tea tonight:
Defrost the cod. Put the cod on a rack in a baking tray, and then part cook (I cooked mine for about 10 mins gas6). Take out of oven and wrap each piece of cod in bacon. Then put back in the oven for 10 mins. Just before serving, put under the grill to crispen up the bacon.
