I have 2 rather long tail ends of cod which I need to cook in the oven,
can anyone inspire me as to how to cook it (apart from just bangit in for 20 minutes)make the most of it, we are only here for the weekend.

I think I'd bake it on top of a sauce of some kind - tomato and chorizo is particularly nice with cod, I find. :drool: I haven't done that in ages, so thanks for reminding me of something I must cook again.Back after a very long break!0

Put sliced lemon on the base of a dish & lay the cod on top. Season. Dot with butter & sprinke with chives.
Cover with tinfoil & put in the oven for about 20mins on gas 4.Try to be a rainbow in someone's cloud.0 -
I've heard of recipes that call for the addition of liquor (cognac, vodka, aquavit) to the mix, and even one that, in place of pepper, used crushed juniper berries and added gin, for a slightly different taste. So I'm a little surprised to see this "dry" recipe0

there is a method called 'en papillote' (i think thats the right spelling) in which you enclose the fish and perhaps some herbs, lemon or lime slices, in either greaseproof paper or baking parchment. then put into the oven. The fact the paper keeps the fish moist is the main reason - but its served in its paper parcel, and this was popular in the late 70s, so its a lovely retro dish!0
