You can poach it in stock, rather than milk. Just heat your stock to boiling point, pour over the fish and leave covered with no heat for ten mins. I do this if I'm making a risotto - that way I can use the stock for cooking the rice.
You could poach the fish, reduce the poaching liquid and add a splash of white wine and serve with new spuds or wild rice.0 -
Wow, thanks for starting this thread Lynz. I never have any idea what to do with fish so I never buy it. I'm funny with some fish but I love cod. Only usually buy it from the chippy though.
Some fab sounding ideas here. I'm gonna have to spend some money buying some cod fillets now! Anyone know of anywhere that has a good deal on cod fillets at the moment?0 -

I never cooked the cod last time I asked, please can you help me I have taken it out of the freezer, looked thru all my recipe sites they all involve ingredients ( quite findamental ones too) I dont have like creme fraiche
I was going to roast the cod with some vegetables and potatoes, but I have no sauce

Do you have white wine?
I cut up some potatoes, a dash of olive oil and start roating them in the pan, if you have some fat cloves of garlic add them too and some dried Oregano. It would be good if you have some tomatoes (peppers too) as 15 minutes after the fish goes in roughly chop some tomatoes into large pieces and start roating those tucked amongst the potatoes. After 10 mins place your fish on top of the roasted veggies and if you have the white wine splash a glass of that on top and season and cook for another 10 mins. It tastes even better with feta or goats cheese and fresh basil but is also yummy just as it is.0 -
Bake it with a tin of tomatoes, olives and mushrooms/peppers/courgettes
Cut it into fingers, egg and breadcrumb it and fry it for hm fishfingers
Roast it with olive oil and serve with posh mushy peas (frozen peas blitzed in the food processor) or with continental lentils.
Just fry in butter and serve with lemon wedges and veg.
