  • I have heard of people replacing the eggs with bananas??? Not sure, it's been a VERY long time since I've baked anything...and if we are talking edible..even longer:D

    Hi,

    My friend's 2 year old is allergic to eggs and dairy products. He is coming round to play again in a few days time and I would love to bake some sort of cake for him. I have a recipe for banana scones that I've made him before but wondered if anyone here could come up with something fun?

    This is an easy and tasty recipe!


    Dairy free chocolate cake

    2oz sunflower oil or PURE margerine
    2oz golden syrup
    8 fl oz soya or rice milk
    6 oz plain flour
    1 oz cocoa
    2 oz sugar
    1 teaspoon bicarb of soda
    3 teaspoons baking powder
    1 tablespoon wine vinegar
    1 tablespoon water

    Grease two 7 inch sandwich tins

    Melt the oil/margarine and syrup in the soya/rice milk in a saucepan over moderate heat. Mix well and cool.

    Sift the dry ingredients into a mixing bowl.

    Pour in the cooled liquid and beat well.

    Ad the vinegar and water and beat again.

    Pour the mixture into the sandwich tins.

    Cook in a preheated oven at 220 deg cent/425 deg far/Gas Mark7 for 15-20 minutes.

    Remove from the oven and cool on a wire tray.

    Sandwich together with raspberry jam or butter icing made with PURE marg.

    Can also spread butter icing on top (like choc fudge cake - very sickly!)

    Alternatively you can use the mixture to make buns.

    i am totally addicted to this, its really healthy too, and ridiculously easy

    2 crushed weetabix
    1 1/2 cups sultanas
    1 cup SR flour
    1 tbs brown sugar (white would do)
    1 or 2 mashed banannas

    mix all these together with 1 cup soya milk
    put in greased/lined loaf tin and bake for about 50 mins

    this is really yummy, a bit like malt loaf
    - prior planning prevents poor performance!

    Six Cup Cake Egg free recipie. Improves with keeping.


    2 cups (350gm) SR Flour
    1 teasp Mixed Spice
    1 cup (225gm) mixed dried fruit
    1 cup Milk
    1 cup (110gm) melted margarine
    1 cup (275gm) golden syrup

    2x1lb loaf tins lined Oven 150c 300f gas 2 increase to 170c 325f gas 3

    Mix flour spice and fruit, Add milk then margarine and syrup. Mix well
    Divide mixture between loaf tins and bake 1 hour. Increase the temperature and bake for a further 10minutes to brown
    Cool on a wire rack.

    Sticky Prune and Date Cake.

    175gm prunes
    300gm butter
    110gm currants
    tin condensed milk
    ¾ teasp bicarb of soda
    1 tbsp Marmalade
    225gm Dates
    110gm Raisins
    300ml Water
    300gm Plain Flour
    Pinch of salt.

    2x1lb Loaf tins lined. Oven 170c 325f Gas 3

    Bring the butter, fruit, water and condensed milk to the boil, then simmer for 3 minutes. Cool for 30 minutes.
    Add the flour, bicarb, salt and marmalade. Mix well. Divide mixture between loaf tins
    Bake 50 minutes

    Brownies

    Makes 16- 20 squares

    Ingredients

    225g/8oz dates
    100g/4oz margarine
    60g/21/2 oz wholemeal flour
    2 teaspoons baking powder
    45ml/3 tablespoons cocoa powder, sieved
    1very ripe banana mashed
    75g/3oz pecans or walnuts, roughly chopped
    5ml/1teaspoon vanilla essence
    150g/5oz plain (vegan) chocolate for topping



    Method

    Preheat the oven to 180°C/350°F/Gas mark 4

    Cook the dates over a medium heat with just enough water to cover them. Cook for 5 minutes or until soft.

    When cooked puree them and allow to cool a little .

    Then cream together the dates and the margarine until light and fluffy.

    Fold in the wholewheat flour, baking powder and cocoa powder.

    Add the banana, nuts and vanilla essence.

    Spread mixture on to an oiled baking tray (7" x7"), smooth top with spatula.

    Bake in oven for 20-25 minutes.

    When cool spread melted chocolate on top and sprinkle with extra pecans or walnuts.
