Hiya im new to this forum and have just read Mrbadexamples mmmm cake and was intrigued.
Me being a bloke myself has never baked a cake and would love to try. The only difference is that i am allergic to eggs but can use milk as a replacement.
If anyone has any ideas on how to make a nice spongy cake without the use of eggs let me know.
I do have some of the equipment needed eg whisk wooden spoon, and a large bowl.
Thanks any help would be appreciated

Hi here are a few i found on cooks.com obviously i havent tried them but good luck, there are more on there so have a look!!! jane:beer:
EGGLESS, MILKLESS CAKE
1 1/2 cups brown or white sugar
1/2 teaspoon cloves, allspice or mace
2 cups hot water
1/2 pkg raisins
1 teaspoon salt
1 teaspoon cinnamon
2 tablespoons shortening (butter or Crisco)
Combine the above ingredients and boil for 5 minutes. Let mixture cool, then add:
3 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
Preheat oven to 350°F. Turn batter out into a 9" tube or Bundt pan or an 8" square cake pan that has been greased and floured.
Bake at 350°F for 1 hour. Allow to cool before frosting with white, lemon or vanilla frosting or use White Frosting; see below.
White Frosting:
1/2 stick butter
3 cups confectioners sugar
3 tablespoons water or milk
1 1/2 teaspoons vanilla or lemon flavoring
Heat butter in milk or water, add to sugar and flavoring. Beat until smooth. Frost top and sides of cake.
QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.
LOW FAT AND EGGLESS CHOCOLATE CAKE
3 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
3/4 c. oil
1/3 c. cocoa
1 tsp. vanilla
2 tsp. vinegar
2 c. water
Mix all ingredients together well. Dump into a lightly greased 9 x 13 pan. Bake in 350 degree oven for 35 minutes. The recipe calls for dumping ingredients into a 9 x 13 pan and mixing well with a fork. I like it better mixing well in a bowl then dumping into the pan.Member 1145 Sealed Pot Challenge No4

This is a nice easy egg-free (and dairy free if you want) chocolate cake which is easy to make.
Dairy free chocolate cake
2oz sunflower oil or PURE margerine or ordinary margerine
2oz golden syrup
8 fl oz soya or rice or cow's milk
6 oz plain flour
1 oz cocoa
2 oz sugar
1 teaspoon bicarb of soda
3 teaspoons baking powder
1 tablespoon wine vinegar
1 tablespoon water
Grease two 7 inch sandwich tins
Melt the oil/margarine and syrup in the soya/rice/cow's milk in a saucepan over moderate heat. Mix well and cool.
Sift the dry ingredients into a mixing bowl.
Pour in the cooled liquid and beat well.
Ad the vinegar and water and beat again.
Pour the mixture into the sandwich tins.
Cook in a preheated oven at 220 deg cent/425 deg far/Gas Mark7 for 15-20 minutes.
Remove from the oven and cool on a wire tray.
Sandwich together with raspberry jam or butter icing made with PURE or ordinary margerine.
Can also spread butter icing on top (like choc fudge cake - very sickly!)0 -
