    Easy weekend roast Pork with hidden veg...

    Dig out the slow cooker or a suitable oven dish... Stick rosemary under the strings of the joint... Plenty of salt & pepper... brown the meat... I use a wok as it doesn't make a mess of the cooker..

    In the bottom of the slow cooker/oven dish... place whole carrots that are just topped and tailed... a couple of sticks of celery... a roughly chopped onion or leek (optional... as I can't have onion)... The point of the veggies is to stop the meat sticking to the bottom... and it also keeps the meat out of the liquid... Therefore the meat roasts and not stews... If you want, you could also lightly fry the veggies in some olive oil before putting them into the container... but it is not necessary.. Pour in some stock... just enough to cover the veggies... This could be cider, chicken stock cube or whatever you fancy... I also throw in an roughly chopped apple or pear that's on the way out...

    Place the meat on top... Pop on the lid and cook for 5 hours on high (slow cooker) or maybe around 3 1/2 hours in a low oven... Check with a cookery book for this..

    When the meat is ready... Remove and place on a chopping board to rest... Get the old whizzer and whiz the veggies through the stock... Thicken with some cornflower if necessary and a touch of gravy browning or some instant gravy granuals... What ever you prefer... Taste and season if necessary... slice the meat and serve with the gravy... All the veggies are in the gravy...

    You could also cook the potatoes alongside the meat but I prefer to pop some new potatoes into a pot as I cook double the amount and I have some for the following day... You could also serve it up with frozen peas or what ever takes your fancy...

    If you feel that the stock is too fatty for you... you could leave to cook until the fat solidifies and remove it or throw in a slice of bread and that usually soaks up the fat...

    I cook most of my roasts on top of veggies... I've done it for years.. I tend to use what ever I have in the fridge as I don't live near a supermarket... Sometimes it is chopped peppers and onions... The children never knew that they were eating veg as well...

    If I have plenty of time, I unroll the pork and cut deep slices into the middle and place spinach that has just been wilted and season... This keeps the meat moist in the middle... and then put the strings back...

    Everyone ready for weigh in tomorrow? Not looking forward to it, have a bad feeling!

    Todays food

    B: cornflakes, ss milk, sultanas
    L: cheese and pickle toastie
    S: mars mini ice cream
    D: stew (mostly the veg and gravy) potatoes, broccoli...and puff pastry :eek:

    E: in the garden doing some more pots, and all the faffing about putting things back after decorating...trying to have less stuff in the room!

    So I was a good mother tonight...provided big plates of red meat and veg :)

    Only 3 lbs to go to get back to my lowest ever adult weight. I've had a week when I've just not thought about food much and it seems to have worked. Just shows that most of the time that I eat I'm not really hungry:o

    erm..i didnt do very well this week. I went on holiday to Wales and eat LOADS of unhealthy food but did alot of walking. unfortunately the scales did not pick up the walking and ive gained 6 lbs:eek:...hopefullly will go quickly now that Im back to normal and will be eating better.:(

    Had a good time though:p

    I'm not even going to post todays weight...I feel really bloated and my jeans are tight :(
    I'm obviously doing something wrong (okay, I know about the pizza!)...I'm thinking about what I eat every day, I don't always make the best choices, but I do have small portions, and I've cut my snacking by about 90%...I don't think my calorie intake is too high. It's so depressing to think that just to keep my weight steady I have to make this much effort.

    I WILL post gain/loss tomorrow, whatever it is, because I don't want to give up, but it's becoming embarrassing not losing anything.

    Been absent for a few weeks, gained some lbs, lost some lbs, pretty much averaged out at a sts over them all. Today when I weighed myself, however, I got a lovely surprise! Expected to see myself still hovering the wrong side of the 10 stone mark, but no, I am now, for the first time in 7 years, the proud owner of a single digit weight (well, the stones bit anyway!) at 9st12!

    I think this puts me at lost two lbs since last updated, it should be 7 overall anyway.

    Well done all who have lost weight this week :T:T

    I went on the Wii this morning and it said I've lost 1lb :T:T

    I don't usually buy packs of leaves, but I did this week and found that I really like them (all except the red ones)! I've had a bit of a thing with salad, l/f dressing and mackerel this week, so it must have worked.

    Changed the bed this morning and got all the washing outside to dry - nothing like wind and solar power to dry the washing ;)

    As all 4 of us were off today I decided we should go out for a family meal. We don't often get the chance to go out together, because usually one or two of us is working, even at weekends.
    We went to Frankie & Benny's and had a lovely lunch. I had the Hawaiian pizza, but didn't feel too guilty as it was a very thin base and I left the crust. Afterwards, I 'shared' a cheesecake with DD2 - actually I had 3 small spoonfuls and she ate the rest. It cost a bit more than I thought it would, but we really don't go out for a meal very often, so it's justified, I think.

    I do little things... Like if I have bread with soup, I don't have potato that day... or if I have potato, I don't have bread that day...so I am limiting myself to potatoes, bread or pasta to once a day... though sometimes I have none.. I find that cutting down my bread, cuts down on the butter, fillings etc..

    Another thing I do, is today I was having grilled sausages and I wanted to work in the garden... so I took the roll, halved it and then scooped out the bread inside so that I was just left with 2 half-moons (if that makes sense) and put the sausages in that... and the discarded bread goes to the chickens...

    I also pretend that I am living in the past... when there was not so much choice... so I don't use mayonnaise... except a little when I have salad (which is rare due to my condition).. people don't believe me when I tell them that I was 16 and living in Letchworth before I tasted my first yoghurt !!! so I now don't eat yoghurt.. as I don't need the snack or the dessert...

    so all these little rules that I have for myself helps me lose weight...

    I know that every one gets obsessed about the 5 a day... I laugh at that... The supermarkets must be rubbing their hands with glee all the way to the bank... You have to ask yourself who is paying for all these studies and recommendations? I bet it is the supermarkets !!! We and most other families only had veg once a day... and that was with the main meal... and it was usually cabbage... There were 7 in our family so there was no way, fruit was bought in mammoth proportions... My mother used to go to the greengrocers and buy fruit and we each got an apple or something but definitely not every day !!! I think it is all these mini meals that we are encouraged to eat that is the problem.. all the snacking... we never feel hungry any more... so that's why I am trying to live in the '60s.... People weren't so fat then as there were hardly any take-a-ways or fast foods (except the local chip shop and that was a once a week thingy)... We never used to put so much food down our throats... The plates are huge now-a-days...

    Anyway, I apologise if I have offended anyone as that is not my intention... it's just that it has taken me years to realise that my problem is all this food that surrounds me and that it is not the answer to all my problems... It shouldn't be used as a substitute for love or need or whatever... and if we cut out the rubbish etc, the weight will fall off... Ask anyone who is thin, how important food is to them and you'll find that it is not important at all.... :) They are not obsessed with it....

    By the way, it's my 43 wedding anniversary tomorrow and I am going to make him a giant chocolate cupcake as he is missing my baking... I don't like chocolate cake but I am sure I will be able to make myself one with caramel or white chocolate or something.... I'll weigh myself before I eat anything... I forgot today was Friday... :)
