I'm finally back down to what I was at the end of the first week of the challenge! I've just gotten over that time of the month, so my weight was a bit skewed this past weekend (thus why I skipped weighing in). Onwards and downwards from here! :)

    Hi everyone,

Sorry I've been MIA since Friday :o I can't possibly list (fess up) to the amount of carp I have eaten since then, but in my defense we have had a few 'issues' to sort out and now that they are, I'm back on the wagon.

    Food today:

B - micro oats, ss milk, tea
L - Warbut0ns brown wrap, tuna, mayo, cucumber, bag of lookey likey frazzles
D - Beef casserole, mash, brocolli
S - banana, apple, one finger Time Out
E - 2 mile school run in the snow

Did lots of walking yesterday as DD and DS2s school was the only one open. DH drove into work in London, so I walked both ways (total of 4 miles) plus had to walk DS1 to the emergency dentist as he managed to snap a tooth sledging on Sunday (another 2 miles).

Positives for yesterday were that I had a well woman check. My BMI is 25.4 but apart from that my cholestrol(sp?) is very good, and my blood pressure is low, so I have a 0.7% chance of a stroke, heart attack or contracting heart disease in the next 10 years. Oh and I've shrunk 1.5cm so only just over 5foot now :(

Sorry for the ramble (making up for not posting since Friday :p)

One of the low calorie/low fat meals that we love here is chicken or prawn fajitas, although you can use beef or any other type of meat or even tofu as well.

We use onions, sliced bell/salad peppers (frozen ones are perfect for this), and the meat. I typically use half as much meat as I normally would for 4 portions (2 for dinner, 2 for the next days lunch). The meat typically works out to 6 oz, or around 180g. We sometimes throw in courgettes sliced like matchsticks, mushrooms, broccoli, etc. We sometimes have these with wraps or rice, but it's also nice on it's own. Which veggies and how much meat/tofu you use determines the calorie count, but it's a wonderful way to get 3, 4 or even all 5 of your 5 a day in!

We use homemade fajita seasoning and we leave the salt out!

    Fajita seasoning
(this is in US measurements, but as long as you get the proportions correct, it should still work out the same taste)

    1 tablespoon cornflour
2 teaspoons MILD chilli powder (don't make the mistake that my DH did and use the hot stuff, wow!) - more or less to taste
1 teaspoon salt (can be omitted)
    1 teaspoon paprika
3/4 teaspoon chicken or vegetable bullion (or use 125 ml chicken or veg stock for the liquid)
    1/2 teaspoon onion granules
    1/4 teaspoon garlic granules
    1/4 teaspoon cumin

Mix with 125 ml water (or stock) and mix until smooth. Pour into the pan with the fajita stuffs (that have been cooked) and bring to a boil. The sauce will thicken.

Tip: If you don't have any of the smaller measuring spoons, 1/8 teaspoon is a good heavy pinch of whatever it is you're measuring. So, for 1/4 teaspoon, use two heavy pinches. Not completely exact, but it's homemade, so you can fiddle with it to get the proper taste. :)

Vegetarian curry is wonderful as well. It makes a ton as well. Here's a link to a slow cooker recipe for it (it's in US measurements, but google is a wonderful friend for converting amounts! Also, any beans can be used, just make sure they're cooked before adding them if you use dry beans like me!): http://crockpot365.blogspot.co.uk/2008/03/vegetarian-curry-crockpot-recipe.html

    Hope this helps!

twigglet have you worked out how many calories you are having? If you are not having enough you will probably not lose weight AND you can cause health problems as well.
