    HI Always happy:hello:

    I like to roast it in the oven with a little olive oil and salt and pepper. It is delicious eaten like that, or then whizzed up into soup (nice with apples :) - but i see you don't like it in soup ) I'm sure there are other recipes - but i'm not sure how you will be able to get rid of the sweet taste?

    There is also a whole thread about BN squash. I'll add your thread to that one later to keep all the information together

    butternut squash and stilton risotto, I dont like stilton but love this rissotto!
    Sliced thinly and fried into "crisps" is good too. Or just halved, de seeded and roasted with anything "stuffed" into it, ie, veggies, cous cous whatever :)

    I like to roast it with olive oil and cinnamon spinkled on top - gives a sweet flavour to it

    I did a spicy lamb and butternut squash stew in the slow cooker last week, with butter beans and other random veg thrown in - it was gorgeous! Along the lines of a moroccan tagine really. I'm hungry just thinking about it! :)
    Trying to jump back onto the moneysaving wagon .... :cool:

  • I like to do butternut squash in the slow cooker as part of a curry. It curries really well.
  • I make butternut squash soup and it doesn't turn out sweet at all. I use the usual onion and celery sweated off, add passata, diced squash, a tin of mixed beans, a tin of cannellinis plus seasoning including chilli and that lovely smoky paprika. I almost skipped with joy when I saw them at 49 pence each in Aldi's Super6 last week. I bought three

    I use it to make an easy mash: piece the skin, microwave till cooked (turning part way through). Get rid of seeds. Scoop out flesh with a fork and mash with butter, salt and pepper. Makes a nice change from mashed potato, and especially good with smoked fish :)

    A little nutmeg will help to counteract the 'sweetness' in soup. My OH makes it with chicken stock, the usual onion etc, half and half potatoes and BNS. Boiled up until all soft, then blended and spices such as freshly grated nutmeg, salt, pepper and cinnamon added. You could leave out the cinnamon if you don't like it. A dash of allspice would help 'savoury' it up a bit too. Taste for seasoning, and add a splodge of cream when serving.
