roast in chunks with olive oil and garlic, when cooked sprinkle over some raisins or sulatanas pre-soaked in orange juice and cubed feta cheese, add pine nuts if you have any - deelicious!0

Squash and spinach lasagne.
Cut the squash into smallish cubes and steam till almost cooked then put half in the bottom of a lasagne dish. Wilt a bag of spinach by pouring a kettleful of boiling water over it through a colander, then put the spinach on top of the squash. (Spinach is usually available in Lidls and is quite cheap). Finish up with another layer of squash and pour a cheese sauce over and cook in the oven until brown on top.
Nutmeg makes a really good flavouring for this, if you like it - add it to the spinach and/or the cheese sauceIt doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0 -
I bought a butternut squash when I did my shopping as they were reduced, but I got it home and realised I have no idea what to do with it..
Has anyone got any recipes I can try?

Butternut squash risotto is lovely, or roasted squash and red pepper soup, mmmmm . I've seen a lot of stuffed squash recipes too, maybe worth googling as I can't remember what they were stuffed with. Or even just roast it in chunks or boil and mash it and have it as a side dish.D'you know, in 900 years of space and time, I've never met anyone who wasn't importantTaste The Rainbow :heartsmil0

skinned sliced, parboiled in stock layer with sliced parboiled potatoes and some thinly sliced onion. Use a little of the stock to moisten, or milk or cream. top with breadcrumbs and/or cheese and bake. I agree with Claire Bear on the roasting chunks too - great with thyme0

There's an earlier thread with lots of recipes for butternut squash that should help so I've added your thread to it to keep the suggestions together.

Butternut Squash Cake
Ingredients
1/2 butternut squash (medium-sized)
200g ground almonds
100g fine sugar
100g butter (or equivalent)
2 eggs
1 heaped teaspoon baking powder
Butter for greasing
Method
1. Peel the squash with a potato peeler. Chop off the stalk and flower end. Chop in half and use a spoon to remove the seeds. Chop into 1/2 inch cubes.
2. Steam in a steamer (or in a large sieve above a pan of boiling water) until soft - about 10-15 minutes. Make sure it's dry before you use it in the cake.
3. Mash the squash until pureed. Let it cool until warm, if using freshly-cooked squash. If using leftovers, cold is fine.
4. Pre-heat the oven to 180 degrees C.
5. Cream the butter and the sugar together, until light and fluffy. You can do this by hand with a wooden spoon or with a mixer.
6. Add the eggs to the butter and sugar, with 2 tablespoons of the ground almonds and the baking powder. Beat well.
7. Add the squash and beat well to combine.
8. Mix in the rest of the almonds. The mixture should be thick, but if it's too thick to stir, add some of the liquid from steaming the squash (cooled), a couple of tablespoons at a time. (Use milk if you don't have any steaming water left).
9. Grease a 7-8 inch cake tin. Put the mixture in the tin and spread it out evenly. Bake at 180 degrees C for about 45 minutes, until a sharp knife inserted into the middle comes out clean.
this cake is so scrummy we are growing squash this year and can't wait to try it again!!0 -

I have just found a butternut squash lurking which I bought some time ago (oops!!!), I don't like butternut squash soup - always found it too sweet, or maybe just not found the right recipe..... suggestions greatly appreciated.I'm not a failure if I don't make it, I'm a success because I :tried!0
