Butternut squash is very good roasted with halloumi cheese. I slice the squash into wedges with the skin on, and if I have other veg suitable for roasting (peppers etc) that goes in the roasting tin too, coated with olive oil and rosemary and black pepper. When almost done shred halloumi cheese over the top and sprinkle liberally with balsamic. Roast for a further 15 mins. Cover with foil and roast for about 30 mins at Gas 5/6
Take off foil and roast for about another 10 mins so that tops of stuffing go crispy and a bit brown. Make sure flesh of squash is soft before serving.
I think there are endless other stuffings you could do - bacon, sausage, etc etc. It was really good and I was very surprised as it was so simple.:rotfl:

Hi all
I bought a butternut squash as i keep hearing how lovely they are and how versatile too. Now i have been looking around for recipes and have seen loads from lasagne to soup to just roast squash......Is what I am wondering is as a family of four who have never tried it before, what would I be safest making first.

I went to ALDI today and picked up a Butternut Squash for 69p. Was really pleased as I have seen them in other Supermarkets at £1.70. I would like some ideas/recipes on what to do with it. I've viewed the Slow Cooker thread, and it advises to cook in in the slow cooker with a couple of tablespoons of water on low for 8 hours, so that it is easy to peel.
Was very pleased with my ALDI shop, I also bought 6 kiwi fruits for 69p and 6 golden delicious apples for 69p. There were lots of fruit and veg for 69p, but I didn't need much, and I always end up throwing things out. xxCat :wave:0 -

Last night I did Chicken & Buternut squash Soup/stew..
from memory, I colored chopped chicken breasts in oil, with a couple (they were small) onions, garlic, added two very large chunked baking potaoes, peeled and peeled, seeded, and chunked butternut squash. (Topped and tailed and then I didn't find it hard to peel with a potato peeler.) Covered in chicken stock with tarragon and woustercershire (sp?) sauce, simmered till soft then crushed some squash and pots to thicken.

We have a rather sad and lonely looking butternut squash sat in our vegetable basket ... if it hangs around much longer it won't be fit for anything other than the bin!
Any tried and tested recipes for butternut squash?

Roast it! By FAR the best way to eat BN squash! Roast with a splash of oil and some other veggies (onion, carrots, parnsips, garlic) for about 40mins and you will be in vegetable heaven! Or ofcourse you can roast it on its own and then either enjoy it as is, or stir it in with risotto or pasta. I'm having BN squash for my tea tonight and I've been looking forward to it all day, haha0
