Butternut Squash and Lentil Curry - I love it!
Fry some onion until soft and translucent but not brown...
add a couple of teaspoons of Thai red or green curry paste depending on which one you like best...or more than that if you love it hot.
one tin of Green Lentils (or be MS and use dried ones you've soaked yourself)
One tin of Coconut milk....
bring to boil and simmer until lentils are half done (tinned ones are already) then add one diced butternut squash and simmer until BS is tender but still has some shape. Serve with Basmati Rice and a nice Naan.

Just managed to find 4 large butternut squash for 50p at the market: good times.
Large vat of soup is on the hob as we speak, but I've still got 2 left? Has anyone ever curried it? Any other bright ideas?
Here's the soup recipe if anyone's interested:
Cube the squash and de-seed ( oven bake the seeds with salt afterwards for DH friendly watching rugby snack);)
Saute 2 onions in a little butter/olive oil
Add 1 tbspn each of cumin seeds, coriander seeds, garlic powder
Add the squash and at least 3.5 pints of water/stock
Salt and pepper to taste
Boil til squash is tender then blitz in a blender

Yes, it is good curried. I like it with chickpeas in a curry or a Moroccan style veggie stew. I like to make soup with them too, but with cubes of melty cheese in mmm.
I haven't seen any home grown ones around yet, but I'll stock up when they come in, they keep so well. My farmshop had all sorts of squash last year. There was a lovely grey-blue one which was bright orange inside. They look so nice piled up in the kitchen too.0 -

It's nice peeled, cubed and roasted with garlic and sage or oregano then when it's cooked top with crumbled feta cheese. The sweetness of the roasted squash works really well with the saltiness of the feta. Makes a nice side dish or vegetable to go with chicken or lamb for example, but it could be a main course if you added some salad leaves, maybe some roasted pumpkin seeds etc, to make a warm 'roasted butternut squash and feta salad'."The happiest of people don't necessarily have the

This lovely autumnal dish is based on a recipe by Sarah Raven. It’s highly adaptable so feel free to replace the cheese, thyme, nuts and honey with other combinations of ingredients – grated cheddar and scraps of smoked bacon are delicious, or try a couple of tablespoons of crème fraiche and loads of chopped herbs.

Or try Nigellas idea of roasting chunks of butternut in oven with olive oil and thyme, then serving topped with crumbled blue cheese (Eg: Saint Agur, roquefort) or goats cheese; and pecan nuts.

I cube and fry mine with some onion until soft, then mash together with some stuffing mix and a little drop of water, then carry on cooking for another 10 mins on low.0
