I added everything in the pot raw, added water to the top and then put it on to boil and then hand blended it when the veggies were soft. I guess not putting stock or cooking onions first obviously was why it was tasteless. I will try it again with your tips i think. Thanks for the help xxGrocery Challenge - Jan £4.42/£200.00

When making soup with butternut squash, cut it in half, drizzle some olive oiul over it and a little salt and roast it in the oven till tender to the fork.
You can then scrape the flesh off the skin easily, and the squash has a nicer flavour IMO.
While you are roasting the squash, sweat down some onions, then add the squash pulp and a little vegetable stock. I also add some cumin and some ginger which makes a nice warming spicy soup. You don't need much stock.
When it is done, blitz it with a stick blender, add a bit of milk and re-heat.I'm a retired employment solicitor. Hopefully some of my comments might be useful, but they are only my opinion and not intended as legal advice.0 -

My OH makes butternut squash soup with a chicken stock base, half and half potatoes and squash, fried up onions and various spices including nutmeg and cinnamon. Blend it up and reduce it a bit, then add milk or cream. Luxuriously rich and creamy.Trust me - I'm NOT a doctor!0

You could always dice it as you would with carrots and 'lose' it in a lasagne.
Butternut squash risotto topped with parmesan cheese is also a nice way to use some up.
I have fussy(ish) youngsters and they are ok eating the above but the soup didn't go down too well with the youngest.

Dice it in bolognaise, pasta sauce or lasange. Roast as wedges with sweet potato. Stuff a baked sweet potato with mashed butternut squash.Living cheap in central London :rotfl:0 -
I make butternut squash soup with a little bit of chilli & ginger added with the onions and then coconut milk added at the end - it's my favourite soup ever, and my kids eat loads of it too.
We also have 'orange chips' made with butternut squash, 'orange mash' and I sometimes chuck it into lasagne/shepherds pie/pasta sauce etc.
Good luck with the cooking - keep going and you'll be sorted in no time, I used to be dreadful but I kept practising & reading/watching things about cooking. I'm not going to be getting any Michelin stars anytime soon but can now confidently put plates of food down in front of DH and the kids without worrying it will be awful :rotfl:Grocery Challenge £5.43/£320.00

My kids eat roasts with potatoes/broccoli/carrots (i know how to cook that
) I am now trying to teach myself (and them) to cook instead of order in (I learnt apple pie last week
) . But they have been used to eating the same foods for years and it is proving harder than i thought it would be
. I really think that someone should come up with the classes for basic cookery in North Yorkshire that is not Rosemary Schrador and costs over £1000 :eek: for the weekend!! Im sure i am not the only mum that doesnt have a clue?

I'm trying so hard to save money and i've got several butternut squashes to use up which i have grown and been storing. However they are beginning to go over.
I have made the usual soup and roasted butternut squash with sunday dinner, but i wondered if anyone has a nice pasta recipe i could use it in (though i have no cream or bacon to use-the recipes i've found all seem to have these ingredients in)
Can anyone advise me of a nice recipe?0 -

I'll add your thread to that one later. If a pasta recipe calls for cream and I don't have any I often just use full cream milk and a knob of butter and it tastes just as good.
