Butternut squash?????

I saw a macaroni cheese dish aimed at children in the supermarket the other day, and it had butternut in it. There is this recipe http://www.foodnetwork.com/recipes/rachael-ray/butternut-squash-mac-and-cheese-recipe/index.html (obviously substituting the fresh butternut for the frozen). [I wonder what frozen butternut is like?]

There's pasta with butternut squash sauce (from the rather tasty Tony Tobin!) http://www.bbc.co.uk/food/recipes/pastawithbutternutsq_81588 (sorry, just realised it's got cream in it. You could just substitute milk though I suppose)
Actually there seem to be loads - I typed in 'pasta with butternut squash' into google and loads cam up. I think you might find yourself overwhelmed with choice!0 -
A very simple recipe is just to cube and roast the butternut squash in the oven with butter and sage (fresh or dried will do) and olive oil and roast until soft and sticky and caramelised round the edges then simply toss with the pasta and add a sprinkling of grated parmesan on top. You can fancy this up with whatever else you have to hand I've used little nuggets of crisply fried bacon, fried up roast pork leftovers and shards of pancetta - just depends what you have but it's perfectly yummy just as the basic recipe, I've also used ordinary cheddar when I've run out of parmesan and that is almost as good.
If you want more recipes and it sounds like you have a few squash to use up it makes a gorgeous curried soup and the economy gastronomy cookbook has the most amazing butternut sqash and chickpea tagine in it and that is one of our family's fave dinners AND my OH is a confirmed carnivore, until we got together and I started (slowly at first) to train him he didn't think it counted as dinner unless there was a large amount of meat in it, so that is how good a recipe that one is.

I've done stiltwalkers first receipe with a bit of added cream, I left my squash in 2" thick slices, very filling only need salad to go with it.
You could do a lasanga, spread with mashed squash.

I bought a Butternut as it was cheap at Aldi and to be honest, have no idea what to do with it other than look at it! Could anyone give me any inspiration please?Lucylema x :j0

You can roast it as a vegetable or you can use it to make soup. You can make chips out of butternut. But my favourite recipe is in traditional Couscous (stewed).0

It's nice pureed as a veg-just cut into chunks and boil for about 30 mins, then mash.
You can add it to a lamb curry. I often freeze any leftover squash and keep it in the freezer until we have curry-makes the lamb go a bit further too.
I've just made soup with half a squash, a sweet potato (also from Aldi), an onion, veg stock and a chilli-it was lovely.0
