    I've got some egg whites from Sunday, does anyone have any suggestions on what I can do with them? I know - meringues - but I'd like other thoughts? And how long can I keep them in the fridge?

    Thanks Squeaky! Great to know I can freeze them, but sadly I can't make macaroons as I'm severely allergic to coconut, can't have it in the house! Fortunately, the OH is really getting into this no-waste thing and he used the egg whites in an omelette the other night when I was out so no need to come up with anything too inventive this time.

    @ Karb - a squishy banana = GREAT CAKE!!! Plus, you can mash it up properly and freeze it till later. How withered was the apple? You know they make awesome crumbles/pies when they're soft. I've got 3 apples I intend to cook with a punnet of plums into a lovely big crumble, and all of them are over a month old now.

    We've just sorted through the fridge, 1 carrot where the top was mouldy, no salvaging that, so about 5p for the wastage bucket. A few more carrots were going soft so we've blanched those and frozen them, the peelings are frozen for the next veg stock batch. There was 1/4 lime so that's sliced and tray-frozen for drinks. We bought an extra freezer a couple of weeks ago so when I was in the supermarket and I saw a reduced loaf of bread I picked it up and that's now in there, so I took out all the frozen ends of loaves I didn't want to chuck and I've toasted them up and made breadcrumbs, back in the freezer in marg pots and great for making escalopes or breaded fish.

    We are finding that our compost bin needs emptying when it's not full anymore, we're getting that good at no waste! Yay for this forum! Yay for this website!!

  • First throw out for aaagggggees - 1/2 tub out of date yogurt - we were away for a few days and since it was dated last month decidednot to risk it. Costing it at 40p. Really glad about this challenge - we're really planning out our food shopping and cooking loads better!

    On the -ve side a rather mouldy grapefruit 35p :-(
    On the +ve side desprouted spuds and made really nice mash; 1/4 sad cucumber peeled and chopped into cubes stirred into sweet and sour prawns
    Challenge: an opened block of white fondant icing (currently in an old bread bag in my fridge door)

    Went to make a coffee this morning, and found that the milk had turned sour.

    I'm working away for a few days from today, so had been trying to make it last rather than buying any more. There wasn't much left, just enough for a cup of coffee and some cereal this morning

    Another 20p to add to the list, so 45p for the month so far.
    Debt free since December 2015. It can be done

    If you have any peppermint extract, im pretty sure that peppermint creams are basically just fondant icing with peppermint extract in- knead in a few drops to taste, shape into little blobs, dip in chocolate, if that's your thing and stick back in the fridge to set up

    Aaages ago, I did start this challenge. While I've not been posting my results, I have been working to these goals. I've considerably reduced how much gets thrown out and there wasn't much to begin with, to be honest. If only we could have a compost heap...

    Just wanted peeps to know that it has helped me no end. Thank you :)

    It's June already!

    Sorry everyone, life here in the wilds of Sunny Suffolk has been rather hectic lately. I haven't even tracked my wastage over much this month either. It's been low though, thank goodness.

    It's been surprising how quiet the thread seems to have got - until you start to think that after their initial shock at finding out how much a member (might) waste and take better control of it that they quickly get to the "nothing much to report stage" so have nowt much else left to say :)

    Anyway, good luck in the new month everyone :)

    Afternoon all, Very pleased with myself today :T. I am the worst for throwing out over ripe fruit and wilted veg at the bottom of the salad drawer. So, I have decided to change my ways and turn it into something. I bought a punnet of nectarines last week and had forgotten about them. They had gone all soft and wrinkly, yesterday, I halved them and removed the stone and made a crumble using soft brown sugar and cinnamon. I served it with fresh cream and it was so tasty. Full of motivation, I have today made banana loaf using brown bananas that had also been forgotten about. I made soup using a carrot, onion and celery (which had gone all soft), I added red lentils to bulk it out, and added homemade chicken stock that I found in the freezer. I have just had a taste and its delicious. For lunch I made a frittata, using 2 eggs, bacon, red onion, and sliced new potatoes (left over from last nights tea). I topped this off with a bit of grated cheese. My fridge and fruit bowl are now empty, however, I am pleased that I have used up things that I would have thrown in the bin resulting in filling and wholesome meals/snacks.

    I was wondering what you have made using bits and pieces lurking around the kitchen/fridge that was past it's best?

    With veggies, its generally soup made in the SC and sometimes we don't even peel the carrots or parsnips. Usually throw in a rough chopped onion, 2-3 carrots chopped, parsnip chopped, couple of spuds and anything else left over. Add stock and leave for a few hrs....blend and usually nice thick soup.
