Hi folks let's try again. This is how the Monday Night Rice Recipe should have read!!!
MONDAY NIGHT RICE
SERVES 2-3
PREP 15MINS
COOK 15MINS
INGREDIENTS
2TBSP OIL
1 EGG, BEATEN WITH 2TBSP WATER
1 ONION, CHOPPED
2 GARLIC CLOVES CHOPPED
1 HEAPED TBSP CURRY POWDER
2 TBSP TOMATO KETCHUP
85G/30Z FROZEN PEAS
250g/9OZ LEFTOVER COLD COOKED RICE
175G/6OZ LEFTOVER CHICKEN OR PORK SHREDDED INTO STRIPS
GOOD SPLASH SOY SAUCE
METHOD
1 HEAT HALF THE OIL IN A PAN. POUR IN BEATEN EGG SWIRL AROUND THE PAN AND LEAVE TO SET FOR 1 MINUTE. FLIP LIKE A PANCAKE AND LET IT COOK ON OTHER SIDE. TIP ONTO PLATE.
2 HEAT THE REMAINING OIL IN SAME PAN. TIP IN ONION AND COOK 3-4 MINUTES, THEN STIR IN GARLIC, CURRY POWDER AND KETCHUP. STIR IN PEAS FOR 2 MINS, THE TIP IN RICE, COOKED MEAT AND 100ML WATER. COOK FOR 5-6 MINUTES STIRRING UNTIL PIPING HOT.
3 SHRED THE OMELETTE INTO STRIPS AND STIR INTO RICE WITH SOME SOY SAUCE.

Sorry - Recipe now reposted with the rice. I think the raw weight you need is roughly one third of the cooked weight.

I have some homemade carrot and lentil soup I made on Sunday. I was hoping to use it up but haven't. How long do you think it will keep for in the fridge? Could I put it in the freezer at this stage?

Thanks for advice on the compote - have used in in some small cupcakes today which were delish - still got tons left so gonna try the suggestions and perhaps have it over some breakfast pancakes with a bit of cream and swirled through some plain yogurt for a quick dessert. I kept to my plan and avoided the supermarket until today - when I went to Asda and spent £39 :eek:! A lot for one person and 4 times what I would usually spend in one week, but over £20 of that was on Calgon and toilet roll (expensive but necessary, boxes of 30 Calgon tabs were £7 which is a saving on the 15-pack version). The good news is that apart from topping up with fruit from my local stall, I think I've got enough for 2 weeks plus, so all being well my next jaunt to the supermarket won't be until at least 9th Feb.
Am using my ever-increasing freezer space to store 4 pints of skimmed milk (on offer 2 for £2), which I will defrost the week after next.Value-for-money-for-me-puhleeze!

Defrosted a whole pack of spring roll pastry thinking I would use it like filo and make some lovely little flans :j.... it just cracked and crumbled and was completely unusable:mad: .... suspect it had been in the freezer for more years than it should! Cant remember how much exactly I paid but am declairing it to be £1.95.... :eek:which completely blows my target for January.
Hey ho! Lets try again in February.... I think I'll try £5 again (Its surprisingly hard when you live in a house with four adults who will not finish up the old before starting the new.... am going to have to hide things I think!!;););))

mumsie mum I made leek and potato on Sat and will be eating the last portion tomorrow, it still looks tastes and smells ok.
As for chipped crockery it depends how bad it is. I always replace chipped glasses ans mugs straight away but will use chipped plates (unless we have guests).I am playing all of the right notes just not necessarily in the right order.

I roasted the seeds from our butternut squash yesterday.... tossed them in black pepper, salt and paprika and 5 mins in the oven (which was on for dinner anyway!) yum yum.... better than chilli peanuts anyday! To think I've been throwing them away all these years....:rotfl:DFWNerd 1417

I can see me having cheesy cabbage pasta this week lots or else the cabbage is gunna go past the point of no return and land in the bin other than that at the min i've been having minimal waste on all fronts!
