I make Southern Style "Fried" Chicken by whizzing up in a blender equal quantities of ready salted crisps and crackers into fine breadcrumbs. I then add some cayenne pepper, paprika, garlic powder (fresh garlic burns) and salt and pepper.
Get skinless chicken pieces, coat them in seasoned flour first, then beaten egg, then the crumbs. Shove it on a baking tray at about 180' until its all cooked through.
I prefer (and find it cheaper) to make it with thighs and drumsticks (bones still in make it moister).
You can use cornflakes instead of crackers BTW0 -

I do similar with Ritz or Tuc for making HM Chicken Nuggets. Just bash them into crumbs, then dip nugget sized pieces of fresh chicken breast into milk to help the coating stick and then into the ritz. Onto the baking tray at 180 for about 20-30 minutes depending on size, turning half way through and ensuring no pink juices are left when you think they are cooked.0 -
We have half a box of assorted Jacobs biscuits for cheese left over. The nice cream crackers are gone and we won't eat the rest with butter/ cheese. There are digestives and other cracker type biscuits. Any ideas other than feeding the birds?

How about crushing them up and using them in a savory cheese cake. I've never made one before, but I've seen it on programmes such as Come Dine With Me.Looking forward to the future.0
