My wife is pregnant, and read no egg whites for her. So would sugarpaste be the only way around this?

Just taken the second one out of the oven, picked one up for a fiver a couple weeks ago and made it with the kids last weekend, about 4 hrs in the log fired Rayburn running at somewhere around 150, so got another to make for dad as I didn't think he'd bother after mum had died this time last year.
This one was in the oven a tad under 4 hrs as the cooker was a shade hotter thanks to the wind today (solid fuel cookers are fab once you've learnt to cook things till they are done with the recipe only being notes for guidance!)
The house smells fantastic and given my usual ineptitude at baking I'm amazed at how good they look and smell, at about £6.50 each (£5 for the cake kit, £1.20 the butter and a bit for the lemon and orange zest, the eggs come from the back yard chickens) I don't think I could have bought the ingredients for that money (and would have ended up with with half used bags of things lurking at the back of the cupboard). Will see how the marzipan and icing goes in the next few days on dads cake as I've promise the kids I'll wait till they are back from the ex on Chrismas eve to do ours.
Picked up a cupcake kit to do with my 7 year old as well and if they are down to £3 will get some more Christmas cake kits when I go in to get some milk on the way to work on Monday as I absolutely love fruit cake.0 -
I have picked one up from Tesco Irlam today for making during the week. Love fruit cake and couldn't resist at that price.0

well i have done mine now, never been good with cakes they always come out flat but this one looks lovely, i'm very lucky its still ok as when making my blender started to smoke badly :eek:
am going to leave icing for a couple days hopefully its as easy as it looks on the videohave now given up smoking since feb 13th 2014 loving the money I'm saving0 -
Hi all, I've been quietly lurking and admiring lovely cakes.
Made the jump yesterday and decided to be brave as cakes are not my forte.
Well it went really well and only took 3.40 hrs as I used a 23cm spring tin so the cake was shallower than normal.
Out of the oven in the rack to cool (still following every letter of the recipe card) but after an hour was still quite warm.
So.... Decide to leave it out overnight to cool.
Well the lovely moist cake seems ti have gone all hard now.
I have wrapped it this morning, but have I messed it up by not wrapping last night? Or is it mean to be like that?

Do you have any brandy/whisky/rum etc try sprinkling the top with that then wrapping in foil and leaving for a day or so repeat process if needed, if you still find its too hard make some Xmas cake(or pudding) truffles
Weigh the cake out (after cutting off excessively dry bits) crumble into a bowl, add half the cakes weight of melted choc, add a tablespoon (or 2) of brandy/rum/whiskey and 3-4 tablespoons of icing sugar, add chopped nuts/chopped glace cherries leave to firm up slightly then roll into walnut sized balls and dust with cocoa powder0 -

Yes. next time if its still not 100% cool and you need to go to bed pop it on an upturned plate/bowl and put in in a tupperwear box0 -
Cakes are now marzipaned, still look and smell as good as when they came out of the oven. As I said I'm usually totally hopeless a baking so am feeling rather pleased with myself with these!0
