    Royal Icing
    Seperate egg, whisk egg white in a bowl until it looks like a cloud. Add 1 tsp of lemon juice and two thirds of the icing sugar and beat. Slowly add the remainder of the icing sugar to reach a stiff consistency.
    Spread the royal icing evenly on top of the marzipan using a palette knife or round bladed knife, right to the edges.
    Touch the tip of the knife to the icing and pull up to form peaks all over the top, giving a snow effect.
    Place the cake on a cake board or flat plate.
    Leave to set for at least 24 hours.
    On Christmas Day tie a ribbon around the cake and add your choice of decoration.

    Picked up the last one in my local express store. My mother inlaw has already made us a cake for chritsmas but figured at this price I'll keep it for my husbands birthday in feb

    My wife is pregnant, and read no egg whites for her. So would sugarpaste be the only way around this?

    It will be fine with eggs, the reason that they suggest women avoid eggs is because if they are not thoroughly cooked there is a possibility of salmonella. She would need to avoid fried eggs and poached eggs, or any other type of egg which is not thoroughly cooked through. Mixed in with the cake itself would be fine, not sure about the icing if that isn't cooked though. It wouldn't bother most but if your being extra careful she could just eat the cake instead of the icing.

  • Loads left in our local express, wasn't sure whether to buy but decided it would be nice to bring a Christmas cake around to my Mum's house for Christmas as she is cooking for us all on Boxing Day and it's a very full house this year!

    If the eggs have the lion stamp they are salmonella free as the laying hens have been vacinated against it, however the outside of the shell can be contaminated so best seperate in a proper seperator rather than using the shell. If you still aren't comfortable using fresh egg white you can buy dried egg whites in the baking isle.
