DD took a batch of the cupcakes to school for the office ladies, they got rave reviews0

Do you think these would be ok to keep and bake next year for xmas? Cant really think there would be anything in them that would matter too much if it was past the date as the fruit is soaked in alcohol so should keep?
I had already made my xmas cakes for this year (I make ones for all the family for part of their xmas presents) but this would save me sooooooo much hassle and time next year
You could try it, If no one is ill after eating it next year you will know it was fine to keep, on the other hand if someone is ill you will know you were wrong0 -

I got a 7" tin, but want to make 2 small cakes for gifts would 2 4" tins do the trick?0 -
Picked one up today. Am going to make it with my girl as a gift for her nan. Was trying to think of something to give her.....and a homemade xmas gift neatly packed so my 5 year old can cause havoc is perfect. Besides....keeps her busy whilst she's not at school.Baby Year 1: Oh dear...on the move
Lily contracted Strep B Meningitis Dec 2006  Now seemingly a normal little monster.
Love to my two angels that I will never forget.0 -

£3 for most people.
What are the recommend times for baking, just baked the Sainbury's one and it said 3.5hrs and 150. I have a fan oven so turned it down to 140 and after 240 checked it and the top fruit pieces are burnt. And the top looks slighty over done, but still not fully baked yet.
But got 3 of these ones to make tomorrow so want to make sure these go better.0 -

just pop a circle of greaseproof over the top of the cake, they are terrible for catching a little after such a long baking time:o0
