  • ok ive poked this cake so many times in the middle it's bound to fall apart when it's cut :D
    think i'll give it 10 more mins then take it out for good- for everyone who hasnt cooked it yet do factor in extra time in case it takes a bit longer (mine will have been in for 5 hours as with the above poster) and ive still got to let it cool for 30 mins before i can take it out of the tin- i hope it doesnt totally dry out if i leave it on the cooling rack overnight because theres no way i can stay up for another hour and half waiting for it to cool enough for me to put it in a tin!!! starting to think i shouldve made it in the morning!!

    I baked the cake a couple of weeks ago, came to ice it yesterday and can't find the flipping instruction leaflet to make up the icing. i was wondering if anyone who still has their leaflet would be so kind as to post the instructions for making up the icing?
  • Just a quick note that there are loads in new osc*tt, birmingham, not where they should be ( thats empty ) but at an aisle end facing the tills nearer the booze end if I remember right a whole wall of them LOL as of last night.
    If only closed minds came with closed mouths!

    1 egg white - is all that needs to be added to the icing. If i remember rightly.

    It will get very thick, you should be able to form peaks with it,

    Royal Icing
    Seperate egg, whisk egg white in a bowl until it looks like a cloud. Add 1 tsp of lemon juice and two thirds of the icing sugar and beat. Slowly add the remainder of the icing sugar to reach a stiff consistency.
    Spread the royal icing evenly on top of the marzipan using a palette knife or round bladed knife, right to the edges.
    Touch the tip of the knife to the icing and pull up to form peaks all over the top, giving a snow effect.
    Place the cake on a cake board or flat plate.
    Leave to set for at least 24 hours.
    On Christmas Day tie a ribbon around the cake and add your choice of decoration.
