if you are getting low on room in your freezer you can always jar apple sauce and pie filling i do this every year so handy having on the shelf instead of having to remember to get it out of the freezer
small jars are great for porridge in the morning or for using in a quick pudding.. we also do mint apple sauce that seems a hit with everyone that i have given it to..0 -
Sorry, only just noticed you asked me for the sage & onion recipe.....I'm a bit of a one for adapting recipes over the years & then not being able to remember what the original one actually was! For sufficient stuffing for a roast dinner plus some left for chicken & stuffing sandwiches, I chop 2 onions fairly finely (food pro is fine for quickness) and cook them in a tblspn of oil or butter until softening but not brown. While that's doing, I peel, core & chop a couple of small apples (great for using up wrinklies), add that to the onions with a couple of tblspns chopped sage (use less if it's dried). Whizz up a couple of slices of bread in the food pro to make breadcrumbs. I always make bread so it's difficult to be sure of quantities if you were using bought sliced, but anything's fine, it's designed to use up stale stuff anyway so use whatever's hanging around, I always do. I prefer it with white, but if I've got wholemeal, I use that. When the onions sage & apple mixture has softened & is smelling really nice & savoury, take it off the heat and add the breadcrumbs. Season with salt & pepper and then add a beaten egg to bind it all together into a not too wet paste. Press it into a tin and give it about 30 mins in the oven towards the end of cooking the meat. if I'm making a bigger quantity to freeze it, I divide it up between those foil containers you get Chinese takeaway in, as they can come out of the freezer, thaw & go straight in the oven. This is a very basic recipe....once you've seen if you like it, you can tweak it to add new flavours. If you keep a breadcrumb box in the freezer, which I try to, it's a good way of stretching a roast dinner. (& makes good sarnies for huge hungry husbands.....if they haven't pinched the leftovers out of the fridge first!!) If I'm making this say at Christmas for people who don't like chestnut stuffing, I add some sausagemeat to it too, just before the egg. I just found a nice way to use up some cinnamon-stewed apples I had in the freezer. Lakeland have some cream horn moulds and this afternoon I've been experimenting with puff pastry.
I made the cream horns, and am now ready to fill them with spiced apple and topped off with whipped cream. Mmm... A tasty retro pud!
