  • I made bread pudding yesterday & chucked 4 eating apples into the mix, I peeled, cored & chopped them first.

    You can stew most kinds of apples and pears - even eaters rather than cookers. If you dont want to use them straight away then they can be stewed and frozen.

    Just keep an eye on the stewing apples as some varieties turn to mush really quickly - so light stewing is best unless you like apple sauce.

    Bit nervous!

    I have about 8 Royal Gala Apples that are definitely not going to eaten, I know they aren't cooking apples but can make "something" with them? so they don't go to waste.

  • I rarely but cooking apples and use older eating apples instead so just use them in the same way as you would cookers. So, Apple pie, crumble, jam, sauce, jelly, scones etc.

    Anything goes really but they might need slightly less cooking.

    I made a kind of cake thing with a load of apples I had. I made a sort of loose flapjack mix with oats, butter and honey, pressed half of it into a tin, then sliced the apples thinly over the top and sprinkled with a bit of sugar. I then pressed the other half over the top and put it in the oven, took it out and sliced it up.

    Was an experiment but it turned out nice, guess you could do it as a traybake too? It would be good as a hot dessert with custard or cooled down for lunchboxes/snacks.

  • I bought an apple corer especially for this. Core the apples, stuff cavities with value dried apricots and place in an oven proof dish with a lid. Boil kettle and pour in water up to half way up apples. Cover dish. Put in medium oven with the rest of a roast dinner. Check after 45 mins. Will be brown and soft when done

    I make apple upside down cake with damaged apples. (Got three apple trees.) Peel apples, core, cut into chunks, line cake tin with greaseproof paper, put knob butter+brown sugar or golden syrup in base of tin, put a standard Victoria sponge cake mix over the top, bake as norma, turn out onto plate and eat warm. Comes out with a sort of toffee apple topping. You do need the greasproof paper (or baking parchment ) disc in the tin to ensure it comes out cleanly but tbh, if it comes out messy it still tastes the same.

    FRENCH BAKED APPLE

    A sophisticated baked apple for consenting adults.

    Serves 2

    INGREDIENTS

    1 sheet (½ a packet) of frozen ready rolled puff pastry
    2 large apples
    ½ a lemon
    2 tablespoons of brandy
    2 tablespoons of butter
    1 tablespoon of honey
    Milk for glazing

    DEFROSTING

    Defrost the frozen pastry according to the instructions on the packet.

    METHOD

    Preheat the oven to 180°C, 350°F, gas mark 4.

    Peel and core the apples. If you have a grater, use it to grate off the lemon peel. If all you have is a paring knife, use it to peel the lemon and then cut the peel it into very fine strips.

    Put the brandy, butter, honey and lemon peel in a bowl. Mix thoroughly.

    Fill the apples with the mixture.

    Unroll the sheet of pastry and cut it in half. Wrap each apple in the pastry. If the pastry tears, patch it with a spare bit, moistening it with water to make it stick. Brush or wipe the pastry with a little milk, which will make it come out of the oven shiny.

    Put the apples in an ovenproof dish and cook in the oven for 25 minutes, until the pastry has gone golden.

    ADDITIONS & ALTERNATIVES

    Use Scotch whisky and change the name to Scottish Baked Apples. Use Irish whiskey and change the name to Irish Baked Apples.

    Serve with cream, crème fraîche, custard, ice cream or even yoghurt.

    TIPS

    Try to use or save the lemon juice for something else.
    The acquisition of wealth is no longer the driving force in my life. :)
