What's everyone's opinions on vegan sushi? I've never had sushi before the idea of it was very off putting, but I keep seeing images of pretty vegan sushi and I'm tempted. Has anyone made it? It is good? What did you put in it?
I'm going to go through the freezer today and reorganise that and try to work out what's in some of the tubs that I've forgot to label!

  • @Living_proof, that food larder sounds great! 😊
@kacie - I love vegan sushi! 😍 I normally use avocado, cucumber and carrot in mine although I have done it with asparagus before...
I'm going to make some tortilla flips today - dry 'fry' a tortilla on one side then turn it over, spread with onion jam,  pop in some grated vegan cheese and roasted tomatoes, fold in half then cook both sides for a few minutes; serve with salad dressed with balsamic- lush!! 😊

On Olio recently I requested a few items, including one Tesco felafel vegan wrap which are normally part of their meal deal. I was given 8 of them in the bag when it was picked up, presumably as I am the only Vegan in the locality. I took them out of their packaging and tinned foiled them, flattening slightly so I could fit them into a freezer drawer. Although they are not meant to be frozen, I have had one for lunch with salad for the last few days with houmous and they have been very tasty. It is shocking to think that at one time all this would have been binned.

I saw a pic recently of a party platter from Waitrose and it looked very pretty and colourful, but I am funny about seaweed (and wasabi :s ) so it's not for me.
  • @Living_proof we don't get olio here - I think the local supermarket has an agreement with a local charity so no freebies but at least there's no food waste 😊
Roasted veg, puy lentils and salad for dinner tonight 😊

Doing a picnic this weekend, this is my plan:
    https://www.healthyrecipeecstasy.com/yellow-couscous-pomegranate-mint-citrus-dressing/
    https://runningonrealfood.com/edamame-mango-salad/
    https://thecheekychickpea.com/vegan-lemon-loaf
    Beetroot hummus and veggies
    Yogurt bark
And probably some crisps of some kind! Not done the mango salad before so hopefully it'll work and taste good as leftovers will be work lunch on Monday!

  • Sounds lovely @kacie - enjoy your picnic!! 😊

  • I'm getting my MIL's old chest freezer today. I'm very excited as this opens up all sorts of batch cooking opportunities! I'm aiming to fill it up with lots of "ready meals" made from stuff that I already have in the cupboards where possible. That's my mission for the next month, then hopefully actual weekday dinners won't be such a rushed faff!

Exciting times indeed @Debt_Me_Out_Of_Here!! 🙌 It's good to have a stock of ready made stuff on hand 😊

I'm starting a month long detox tomorrow so will mainly be eating fresh fruit, salad, herbs and veg along with short grain brown rice, nuts, hommous and a variety of dressings 😊 really looking forward to it actually- been eating far too much rubbish recently and drinking far too much!!! 🙈

Tomorrow will be a fruit smoothie for brekkie along with some black grapes; herb and nut balls with an apple and beetroot salad, roasted veg, brown rice and salad leaves for lunch; roasted sweet potatoes, hommous, sprouting broccoli in seed butter, asparagus with a lemon and dill oil dressing and lots of salad leaves for dinner - can't wait!! 😋😊

Hi everyone, mind if I join you? I'm mostly plant based and OH is omni so cooking takes some co-ordination and thought but we have been so disorganised recently it has involved too many takeaways and too much freezer food.

Planning to inventory the freezer and cupboards this weekend then make a meal list.

Lunch today was celeriac and apple soup - two portions leftover to use up / freeze.
