  • Got a 'mystery' box out of the freezer yesterday 😉 turned out to be hm haggis 🙌 had it last night with homegrown runner beans and potatoes - we built new compost bins at the weekend and moved the contents of one of the current bins into it- found the potatoes in there! 😂 mashed them and mixed in horseradish sauce - very yummy! 😊 
    Enough left for tonight too!

  • Another mystery box from the freezer for dinner tonight 😊 I still don't know what it is as it's not defrosted yet but I'm making courgette rolls as a side dish regardless as I have a courgette to use 😂 the courgette rolls are courgettes sliced vertically then chargrilled, spread with hommous, chopped black olives and roasted red onion then rolled up and served. They should go with pretty much anything but if the combination doesn't feel like it will work I'll serve them as a starter or use them for lunch 😉

    Loving the sound of mystery boxes out of the freezer, I have a few of those too!

    Need some ideas for using dried soya mince, only used it once in a fake bolognaise and it wasn't great so any inspiration would be welcome.

    Was planning on having stuffed courgette (marrow) for dinner tonight but ran out of time so that may be dinner tomorrow.  Lunch will be the reduced vegan cottage pie I got out of the freezer to make space.

    Maybe something like a keema curry or a chilli where the spices will cover the soya taste a bit.

    That's a good idea thanks, will try that this weekend and do a fakeaway.
  • @CCW007 - when I had soya mince to use up I just added a handful to casseroles, chillis, curry's etc - I found it was too much as a base for a meal - I haven't used the stuff for years but it always tasted a bit 'cardboardy' to me! 

    Freezer surprise meals are going well - we've used another two! 😊 We've had a pasta sauce and a rice bake- the pasta sauce I split in two and used half as intended and the other half I blitzed added some pesto and made soup. The rice bake we ate as it came. I have another box for tonight - might take a sneaky peek to see if I can work out what it is!! 😂

  • The freezer surprise box turned out to be seitan in a red wine sauce 😊 served it with new potatoes, swede, carrots and savoy cabbage which I got from the garden 🙌 lots of veg left over so we'll be having that tonight with a 'mince' and onion pie that I made a while back (also from the freezer but not a surprise!! 😂)

  • I always add a few tablespoons of soy sauce when soaking soy mince, it then tastes pretty much like the 'fresh' stuff out of the chiller cabinets. Also sometimes add wine or beer depending on the recipe. Then it goes into spag bol or shepherds pie with all the other seasonings.

    Haven't dropped in on this thread in ages, it's been  enjoyable catching up.

    Busy day today - I've sorted the freezers and found seven 'surprise' boxes 🙈 we've decided that we will do a minimum of 3 a week so that we clear them within the next fortnight 😊 

    While I was in the freezer, I discovered half a bag of frozen carrots and a quarter of a bag of green beans which had seen better days so I rinsed them to get rid of the ice then put them in a pan with a sliced onion, dried parsley and veg stock, cooked, blitzed and now have 3 boxes of soup which will do me for lunches next week 🙌 

    We're having bubble and squeak tonight - I had quite a bit of cooked savoy cabbage and some cooked carrots so mashed some spuds, chopped an onion and made up some stuffing- mixed it all together and it's in the oven cooking now 😊 

    I also had some greengages left from the greengage gin I made last autumn so I've made a jar of jam too!

    I've had a real craving for hunters chicken lately, anyone know how to make something similar but vegan? 

    Also need to remember to make some hummus tomorrow!
