  • @Debt_Me_Out_Of_Here it's a great idea to cook and freeze (as long as you use it!! 😉) I'm exactly the same with dried beans - I just open a tin for speed! 🙈 However, I've just cooked a job lot of black turtle beans, cannellini beans and chickpeas so I'll be able to grab them out of the freezer and defrost quickly instead 😉

    I've cooked a pan of mixed grains too - buckwheat, short grain brown rice and quinoa - I'm having salad leaves, mixed grains and black turtle beans in a coriander, lime and chilli salsa tonight - I may add some bokchoi too as dh bought some home for no apparent reason yesterday! 🤔😂

    Successfully made the beetroot bread, however it's a little stronger tasting than I thought it would be, so got to think of how I can use it. Might see how it is toasted with some peanut butter in the morning. 
    Tomorrow's recipe attempt is a portabello mushroom burger, tempted to grab some avocado on my way home from work to go with it.

    All these recipes sound amazing. Will have to try dipping my head in from time to time, though barely have time for the Grocery challenge.
    Started transitioning over to veganism in November 2015. So, five and half years now. Often need inspiration for ideas, but work tends to take over.

  • I've made a few frugal things to help use up cupboard stuff too - carrot cake muffins and minestrone today. Enough to have some left for the freezer. 
    Didn't get paid my usual childcare Universal Credit this month so will try and be extra frugal this month.

    Carrot cake muffins sound amazing, do you have a recipe please? 
    I'm currently attempting my first tofu air fryer recipe, a twist on lemon chicken, we will see how it comes out. 

  • @kacie it was this recipe https://itdoesnttastelikechicken.com/easy-vegan-carrot-muffins/ but I didn't have walnuts or coconut, so I used a mix of chopped sunflower seeds, chopped almonds and raisins and they were delicious.

    Lemon tofu was great, except the sauce wasn't very saucy the next day, still had the flavour though. In this heat I'm not feeling like baking, but I'll definitely remember that one for when it's a bit cooler.  @Debt_Me_Out_Of_Here I got lucky, it was my dad's but he didn't get on with it so I have it now.
    Today will be a freezer meal, trying to use up what's in there, I think there's some sausages so might do a bbq type of meal tonight, sausages in a bun, with a few new potatoes and salad. I'm loving that vegan coleslaw is easy to buy now. 
  • @kacie that lemon tofu sounds lush! An air fryer is one of the few gadgets I don't possess...perhaps this will justify buying one 🤔😂 
    Made a potato bake yesterday - mashed potato mixed with a very garlic heavy cannellini bean 'hommous' and chopped spring onions, drizzled with olive oil and baked for 30mins. Served it with sautéed pakchoi in french mustard (with fresh tarragon added after it was cooked), broccoli and green beans drizzled with a fresh dill, lemon and olive oil dressing.  It was lovely and I've got enough for today too!! 🙌

    @leftatthetrafficlights that sounds wonderful! Today for the first time I went to a community food larder in a local village. The lady who runs it mentioned it to me when I picked up a bag of veg from Olio. It's not a foodbank and you pay £5 for a mix of fresh and tinned/jarred/packaged goods. Vegan produce was picked out separately and £5 worth will be enough for a couple of weeks of food. They were also selling strawberries at £1 per kilo so I bought a couple of packs of those. Other than fresh salad leaves I shalln't need to buy anything for quite a while. One of the items was a live sauerkraut which I haven't come across before - well in date and normally £5.49 a pack and I'll be interested to see how that tastes.
